🍽️ Pan-fried Cod with Creamy Potato-Broccoli Mash

Ingredients
- cod, frozen 600 g
- potatoes, mostly waxy 800 g
- salt pinch
- broccoli 1 pc.
- onions, yellow 2 pc.
- butter 5 tbsp
- lemons 1 pc.
- pepper, black ground pinch
- wheat flour, type 405 2 tbsp
- milk 200 ml
Instructions
- 1. Ideally, thaw the cod overnight in the refrigerator.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Cut the potatoes into coarse cubes.
- 4. Place the potato cubes in a pot with salted water.
- 5. Bring the water to a boil and cook the potatoes for about 25 minutes.
- 6. Wash the broccoli thoroughly.
- 7. Divide the broccoli into florets about 2 cm in size.
- 8. Peel the tough stem of the broccoli and chop it coarsely.
- 9. Add the broccoli to the pot during the last 7 minutes of the potatoes' cooking time.
- 10. Halve the onions and peel them.
- 11. Slice the onions into rings.
- 12. Heat 2 tablespoons of butter in a frying pan over low to medium heat.
- 13. Slowly fry the onion rings until golden brown for about 15 to 20 minutes.
- 14. Wash the lemon thoroughly.
- 15. Halve the lemon and squeeze out the juice.
- 16. Rinse the cod fillets.
- 17. Pat the fillets dry with kitchen paper.
- 18. Season the fillets with salt, pepper, and the lemon juice.
- 19. Coat the fillets in flour so they are lightly covered.
- 20. Heat 1 tablespoon of butter in a frying pan over medium heat.
- 21. Fry the cod fillets for about 4 to 5 minutes on each side.
- 22. Drain the potatoes and broccoli.
- 23. Let the vegetables steam dry for a short moment.
- 24. Add milk and the remaining butter to the pot.
- 25. Mash everything into a smooth puree using a potato masher.
- 26. Season the puree with salt and pepper to taste.
- 27. Plate the puree.
- 28. Garnish with the caramelized onion rings and the fish fillets.
