🍽️ Crispy vegan spaetzle with caramelized apple and mushrooms

Ingredients
- vegan margarine 3.5 tbsp
- Vemondo vegan spätzle 800 g
- apples, red 2 pcs
- lemons 1 pcs
- sugar 1 tbsp
- mushrooms, brown 500 g
- vegetable onions 1 pcs
- oil 2 tbsp
- vegetable broth 100 ml
- vegan fresh spread, plain 2 tbsp
- salt pinch
- pepper, black ground pinch
- parsley, fresh 20 g
Instructions
- 1. Heat 2 tablespoons of margarine in a frying pan over medium heat.
- 2. Add the vegan spaetzle to the pan.
- 3. Warm the spaetzle for about 5 minutes, shaking the pan occasionally.
- 4. Wash the apples thoroughly.
- 5. Remove the core from the apples.
- 6. Halve the apples and cut them into wedges.
- 7. Halve a lemon.
- 8. Squeeze out 3 tablespoons of lemon juice.
- 9. Mix the lemon juice with the apple wedges in a bowl.
- 10. Melt 1.5 tablespoons of margarine in a separate frying pan over medium heat.
- 11. Place the apple wedges into the hot pan.
- 12. Sprinkle sugar over the apples.
- 13. Fry the apples until golden brown for about 5 minutes, turning them constantly.
- 14. Clean the mushrooms with a kitchen towel if necessary.
- 15. Slice the mushrooms.
- 16. Halve an onion.
- 17. Peel the onion.
- 18. Dice the onion finely.
- 19. Heat oil in a frying pan over medium heat.
- 20. Fry the mushrooms until golden brown for about 6 minutes, turning them regularly.
- 21. Add the onions to the mushrooms during the last 4 minutes of cooking.
- 22. Deglaze the pan with vegetable broth.
- 23. Cook the mixture for about 3 minutes.
- 24. Stir the spreadable vegetable product into the mushroom mixture.
- 25. Season the mushroom mixture with salt and pepper to taste.
- 26. Wash the parsley.
- 27. Shake the parsley dry.
- 28. Pluck the parsley leaves from the stems.
- 29. Chop the parsley leaves roughly.
- 30. Plate the spaetzle.
- 31. Distribute the apples and mushrooms over the spaetzle.
- 32. Garnish the dish with the chopped parsley.
- 33. Serve the dish immediately.
