🍽️ Fried Caprese Tramezzini

Ingredients
- Vine tomatoes 1 pc
- Mozzarella 1 pc
- Basil, fresh 20 g
- Salt pinch
- Pepper, black ground pinch
- Eggs 2 pc
- Whipping cream 100 g
- Toast bread 8 slices
- Olive oil 2 tbsp
Instructions
- 1. Wash the tomatoes thoroughly under running water.
- 2. Halve the tomatoes and remove the hard stem ends.
- 3. Cut the tomato flesh into small cubes.
- 4. Let the mozzarella drain well.
- 5. Cut the mozzarella into small cubes as well.
- 6. Wash the basil leaves under cold water.
- 7. Pat the leaves dry with a kitchen towel.
- 8. Pluck the leaves off the tough stems.
- 9. Finely chop the basil leaves.
- 10. Place the tomato cubes, mozzarella cubes, and chopped basil into a bowl.
- 11. Season the filling with salt and pepper to taste.
- 12. Mix the ingredients in the bowl thoroughly.
- 13. Whisk the eggs in a separate bowl with the cream.
- 14. Season the egg and cream mixture with salt and pepper.
- 15. Remove the crusts from the toast slices.
- 16. Dip each toast slice briefly into the egg and cream mixture.
- 17. Let the toast slices absorb the liquid well.
- 18. Spread the tomato and mozzarella filling onto four toast slices.
- 19. Leave a border of about one centimeter free.
- 20. Cover the filled toast slices with the remaining toast slices.
- 21. Press the edges of the sandwiches together firmly.
- 22. Heat some oil in a pan over low temperature.
- 23. Fry the tramezzini over low heat for about five to six minutes per side.
- 24. Cover the pan while frying.
- 25. Remove the finished tramezzini from the pan.
- 26. Cut the sandwiches diagonally in half.
- 27. Serve the tramezzini warm.
