🍽️ Fried Schupfnudeln with Bacon and Mushrooms

Ingredients
- onions, yellow 1 pc.
- white button mushrooms 500 g
- parsley, fresh 20 g
- bacon strips 150 g
- oil 4 tbsp
- Schupfnudeln (potato dumplings) 800 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Cut the onion in half, peel it, and dice it finely. If necessary, clean the mushrooms with a cloth and quarter them. Wash the parsley, shake it dry, pluck the leaves from the stems, and chop them finely.
- 2. Heat a pan over high heat and fry the bacon strips for about 3 minutes until golden brown. Transfer the bacon to a bowl and set aside. Do not clean the pan.
- 3. Add 2 tablespoons of oil to the pan along with the drippings and sauté the mushrooms for about 4 minutes until golden brown. Add the onions and sauté for another 2 minutes. Then transfer everything to the bowl with the bacon. Add 2 tablespoons of oil to the pan and fry the Schupfnudeln for about 5 minutes until golden brown.
- 4. Add the bacon-mushroom mixture from the bowl to the Schupfnudeln in the pan and fry everything for about 2 minutes while tossing. Finally, stir in the parsley and season everything with salt and pepper. Serve the Schupfnudeln with bacon and mushrooms on plates. Enjoy your meal!
