  1. 1. Peel the apples, remove the cores, and cut the flesh into small cubes.
  2. 2. Wash the lemon thoroughly, halve it, and squeeze out the juice.
  3. 3. Place the apple pieces, apple juice, sugar, and lemon juice into a pot.
  4. 4. Cook the mixture over medium heat for about 10 minutes until the apples are soft.
  5. 5. Mash the applesauce roughly and season it to your taste.
  6. 6. Peel the onion and cut it into thin strips.
  7. 7. Peel the garlic and chop it finely.
  8. 8. Wash the chives, pat them dry, and cut them into small rings.
  9. 9. Grate the Alpine cheese coarsely.
  10. 10. Heat the oil in a frying pan over high heat.
  11. 11. Fry the diced bacon together with the onion and garlic for about 1 minute.
  12. 12. Add the Schupfnudeln to the pan and fry them for a total of about 5 minutes until golden brown.
  13. 13. Deglaze the pan with the cream and bring the mixture to a boil.
  14. 14. Remove the pan from the heat and stir in the Alpine cheese until it has melted.
