🍽️ Crispy Schupfnudeln with Bacon and Homemade Applesauce

Ingredients
- Apples, red 2 pcs
- Lemons 1 pcs
- Apple juice 100 ml
- Sugar 1 tbsp
- Onions, red 1 pcs
- Garlic cloves 1 pcs
- Chives, fresh 10 g
- Alpine cheese 200 g
- Oil 1 tbsp
- South Tyrol bacon 120 g
- Schupfnudeln 800 g
- Whipping cream 200 ml
Instructions
- 1. Peel the apples, remove the cores, and cut the flesh into small cubes.
- 2. Wash the lemon thoroughly, halve it, and squeeze out the juice.
- 3. Place the apple pieces, apple juice, sugar, and lemon juice into a pot.
- 4. Cook the mixture over medium heat for about 10 minutes until the apples are soft.
- 5. Mash the applesauce roughly and season it to your taste.
- 6. Peel the onion and cut it into thin strips.
- 7. Peel the garlic and chop it finely.
- 8. Wash the chives, pat them dry, and cut them into small rings.
- 9. Grate the Alpine cheese coarsely.
- 10. Heat the oil in a frying pan over high heat.
- 11. Fry the diced bacon together with the onion and garlic for about 1 minute.
- 12. Add the Schupfnudeln to the pan and fry them for a total of about 5 minutes until golden brown.
- 13. Deglaze the pan with the cream and bring the mixture to a boil.
- 14. Remove the pan from the heat and stir in the Alpine cheese until it has melted.
- 15. Finally, season the Schupfnudeln with salt and pepper to taste.
- 16. Serve the Schupfnudeln with the applesauce and chives.
