🍽️ Fried Char Fillets with Braised Cucumbers and Mashed Potatoes

Ingredients
- Arctic char, whole 4 pcs
- Potatoes, floury 1 kg
- Salt pinch
- Cucumbers 2 pcs
- Onions, yellow 1 pc
- Dill, fresh 10 g
- Wheat flour, Type 405 2 tbsp
- Oil 4 tbsp
- Mustard 1 tsp
- Pepper, black ground pinch
- Butter 3 tbsp
- Milk 200 ml
- Nutmeg, ground pinch
Instructions
- 1. Rinse the char fish under running water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Place a sharp knife diagonally at the head of the fish.
- 4. Make a cut down to the central bone.
- 5. Carefully guide the knife along the backbone to the tail fin.
- 6. Separate the meat evenly from the bone to release the fillet.
- 7. Slide the knife under the central bone.
- 8. Also separate the second fillet.
- 9. Peel the potatoes.
- 10. Wash the potatoes thoroughly.
- 11. Halve the potatoes.
- 12. Place the potatoes in a pot with salted water.
- 13. Bring the water to a boil.
- 14. Cook the potatoes until tender for about 20 minutes.
- 15. Wash the cucumbers thoroughly.
- 16. Cut off the ends of the cucumbers.
- 17. Halve the cucumbers lengthwise.
- 18. Scrape out the seeds with a teaspoon.
- 19. Cut the cucumber halves into pieces about 1 cm thick.
- 20. Halve an onion.
- 21. Peel the onion.
- 22. Dice the onion finely.
- 23. Wash the dill.
- 24. Shake the dill dry.
- 25. Pluck off the dill tips.
- 26. Chop the dill finely.
- 27. Heat 2 tablespoons of oil in a pot over medium heat.
- 28. Fry the onions in it for about 1 minute.
- 29. Add the cucumbers.
- 30. Fry the cucumbers for another 3 to 4 minutes.
- 31. Stir in the dill and mustard.
- 32. Season the braised cucumbers with salt and pepper.
- 33. Season the char fillets with salt and pepper.
- 34. Dust the fillets all over with flour.
- 35. Heat 2 tablespoons of oil in a frying pan over high heat.
- 36. Fry the fillets for about 4 minutes on the skin side.
- 37. Add 1 tablespoon of butter.
- 38. Turn the fillets.
- 39. Finish cooking the fillets for approx. 1 minute.
- 40. Drain the potatoes with a lid.
- 41. Let the potatoes steam for a short time.
- 42. Add milk and 2 tablespoons of butter.
- 43. Process everything into mash with a potato masher.
- 44. Season the mashed potatoes with nutmeg and salt.
- 45. Plate the fried char fillets.
- 46. Add the braised cucumbers.
- 47. Add the mashed potatoes.
- 48. Serve the dish.
