  1. 1. Fill a large pot with about 2 liters of water and bring it to a boil.
  2. 2. Separate two eggs and add only the yolks and a third egg to a bowl with the quark.
  3. 3. Mix the quark-egg mixture well and season it with salt, pepper, and grated nutmeg.
  4. 4. Beat the egg whites with a pinch of salt until they form stiff peaks.
  5. 5. Gently fold the beaten egg whites into the quark mixture to lighten it.
  6. 6. Sift the flour finely and mix it gently into the dough.
  7. 7. Moisten a tablespoon with water to make it easier to scoop the dough.
  8. 8. Scoop portions of dough with the spoon and shape them into small dumplings.
  9. 9. Carefully place the dumplings into the boiling water.
  10. 10. Wait until the dumplings rise to the surface, then let them cook for about 5 minutes.
  11. 11. Remove the cooked dumplings with a slotted spoon and let them drain briefly on kitchen paper.
  12. 12. Heat 1 tablespoon of oil in a frying pan.
  13. 13. Fry the dumplings for about 2 minutes until golden brown.
  14. 14. Turn the dumplings carefully with a spoon so they do not fall apart.
  15. 15. Wash the radishes and cut off the root ends.
  16. 16. Slice the radishes thinly.
  17. 17. Wash the chives, pat them dry, and slice them into fine rings.
  18. 18. Whisk crème fraîche in a bowl with 2 tablespoons of oil, vinegar, salt, pepper, and sugar.
  19. 19. Stir the fine chive rings into the dressing mixture.
  20. 20. Add the salad mix and the radish slices to the bowl and mix everything well.
  21. 21. Plate the salad and place the fried quark dumplings alongside it.
  22. 22. Sprinkle the dish with some fresh chives and serve immediately.
