🥗 Fried Quark Dumplings with Salad and Radishes

Ingredients
- Eggs 3 pcs.
- Quark 20% fat in dry matter 800 g
- Salt pinch
- Pepper, black ground pinch
- Nutmeg, ground pinch
- Wheat flour, Type 405 100 g
- Oil 3 tbsp
- Salad mix 300 g
- Radishes 1 bunch
- Chives, fresh 10 g
- Crème fraîche 4 tbsp
- Vinegar 1 tbsp
- Sugar pinch
Instructions
- 1. Fill a large pot with about 2 liters of water and bring it to a boil.
- 2. Separate two eggs and add only the yolks and a third egg to a bowl with the quark.
- 3. Mix the quark-egg mixture well and season it with salt, pepper, and grated nutmeg.
- 4. Beat the egg whites with a pinch of salt until they form stiff peaks.
- 5. Gently fold the beaten egg whites into the quark mixture to lighten it.
- 6. Sift the flour finely and mix it gently into the dough.
- 7. Moisten a tablespoon with water to make it easier to scoop the dough.
- 8. Scoop portions of dough with the spoon and shape them into small dumplings.
- 9. Carefully place the dumplings into the boiling water.
- 10. Wait until the dumplings rise to the surface, then let them cook for about 5 minutes.
- 11. Remove the cooked dumplings with a slotted spoon and let them drain briefly on kitchen paper.
- 12. Heat 1 tablespoon of oil in a frying pan.
- 13. Fry the dumplings for about 2 minutes until golden brown.
- 14. Turn the dumplings carefully with a spoon so they do not fall apart.
- 15. Wash the radishes and cut off the root ends.
- 16. Slice the radishes thinly.
- 17. Wash the chives, pat them dry, and slice them into fine rings.
- 18. Whisk crème fraîche in a bowl with 2 tablespoons of oil, vinegar, salt, pepper, and sugar.
- 19. Stir the fine chive rings into the dressing mixture.
- 20. Add the salad mix and the radish slices to the bowl and mix everything well.
- 21. Plate the salad and place the fried quark dumplings alongside it.
- 22. Sprinkle the dish with some fresh chives and serve immediately.
