🍝 Quick Fried Noodles with Asian-Style Pork Tenderloin

Ingredients
- Salt pinch
- Pork fillet 600 g
- Ginger, fresh 20 g
- Garlic cloves 2 pcs.
- Spring onions 1 bunch
- Pepper, red 1 pc.
- Band noodles 250 g
- Oil 5 tbsp
- Soy sauce 3 tbsp
- Cilantro, fresh 10 g
- Vegetable broth 300 ml
- Pepper, mixed pinch
Instructions
- 1. Fill a pot with about 2 liters of water and add salt. Cover the pot and place it on the stove to bring the water to a boil.
- 2. Rinse the pork tenderloin under cold water and pat it dry with a kitchen towel.
- 3. Cut the meat into thin strips by slicing across the grain.
- 4. Set the meat strips aside to allow them to reach room temperature.
- 5. Peel the ginger and the garlic.
- 6. Dice the ginger and garlic finely.
- 7. Wash the spring onions thoroughly.
- 8. Cut off the tough ends of the spring onions.
- 9. Slice the spring onions into thin rings.
- 10. Wash the bell pepper.
- 11. Quarter the bell pepper.
- 12. Remove the core and seeds from the bell pepper.
- 13. Cut the bell pepper into bite-sized pieces.
- 14. Remove the pot of boiling salted water from the heat.
- 15. Add the noodles to the hot water.
- 16. Cover the pot and let the noodles steep for about 4 to 5 minutes.
- 17. Heat 2 tablespoons of oil in a frying pan over high heat.
- 18. Sear the pork tenderloin in the hot pan.
- 19. Fry the meat for about 2 to 3 minutes.
- 20. Deglaze the meat with soy sauce.
- 21. Swirl the pan briefly to distribute the soy sauce.
- 22. Remove the meat from the pan and place it on a plate.
- 23. Drain the noodles in a colander.
- 24. Let the noodles drain well.
- 25. Add 1 tablespoon of oil to the pan with the pan drippings.
- 26. Fry the prepared vegetables while stirring constantly.
- 27. Fry the vegetables for about 5 minutes.
- 28. Heat 2 tablespoons of oil in a second frying pan over medium to high heat.
- 29. Fry the noodles in the second pan.
- 30. Fry the noodles for about 4 to 5 minutes.
- 31. Wash the coriander leaves.
- 32. Shake the coriander leaves dry.
- 33. Remove the thick stems from the coriander.
- 34. Finely chop the coriander.
- 35. Add the broth to the vegetables in the first pan.
- 36. Add the pork tenderloin back into the pan.
- 37. Continue frying everything while swirling for about 2 minutes.
- 38. Season the dish with the remaining soy sauce.
- 39. Season the dish with pepper.
- 40. Plate the pork tenderloin strips.
- 41. Plate the fried noodles.
- 42. Serve the dish immediately.
