🥗 Crispy Potato Patties with Warm Red Cabbage and Apple Salad

Ingredients
- potatoes, mainly waxy 800 g
- salt pinch
- red cabbage, fresh 600 g
- apples, red 2 pcs.
- parsley, fresh 15 g
- pistachios 50 g
- sugar pinch
- oil 4 tbsp
- pepper, black ground pinch
- balsamic vinegar, light 3 tbsp
- eggs 2 pcs.
- wheat flour, Type 405 4 tbsp
Instructions
- 1. Peel the potatoes and cut them into large cubes.
- 2. Place the potato cubes in a pot with salted water.
- 3. Bring the water to a boil and cook the potatoes over medium heat for about 15 minutes.
- 4. Remove the hard core from the red cabbage.
- 5. Slice the red cabbage into thin strips.
- 6. Wash the apples thoroughly.
- 7. Halve the apples and remove the core.
- 8. Grate the apple halves coarsely.
- 9. Wash the parsley.
- 10. Shake the parsley dry.
- 11. Finely chop the parsley.
- 12. Coarsely chop the pistachios.
- 13. Place the pistachios in a dry pan.
- 14. Add a little sugar to the pistachios.
- 15. Roast the pistachios over medium heat for about 2 minutes.
- 16. Remove the roasted pistachios from the pan and place them on a plate.
- 17. Clean the pan thoroughly.
- 18. Heat 2 tablespoons of oil in the pan.
- 19. Sauté the red cabbage for about 5 minutes.
- 20. Season the red cabbage with 1 teaspoon of sugar, salt, and pepper.
- 21. Deglaze the red cabbage with balsamic vinegar and 4 tablespoons of water.
- 22. Let the red cabbage simmer for about 3 minutes.
- 23. Remove the red cabbage from the heat and set it aside.
- 24. Drain the cooked potatoes.
- 25. Let the potatoes steam dry in the pot for a moment.
- 26. Mash the potatoes in the pot.
- 27. Separate the eggs into yolks and whites.
- 28. Add the egg yolks and flour to the potato mixture.
- 29. Season the mixture generously with salt and pepper.
- 30. Knead everything into a smooth dough.
- 31. Form about 8 small balls from the dough.
- 32. Press the dough balls slightly flat to form patties.
- 33. Heat 2 tablespoons of oil in a clean pan.
- 34. Fry the potato patties for about 2 minutes on each side until golden brown.
- 35. Let the finished patties drain on kitchen paper.
- 36. Mix the grated apples with the warm red cabbage.
- 37. Season the salad with salt and pepper if necessary.
- 38. Plate the potato patties.
- 39. Serve with the warm red cabbage and apple salad.
- 40. Sprinkle the dish with chopped parsley and pistachios.
- 41. Serve the meal immediately.
