🍽️ Pan-fried Gnocchi with Vegan Wild Garlic Pesto

Ingredients
- Oil 6.5 tbsp
- Pine nuts 5 tbsp
- Wild garlic 100 g
- Parsley, fresh 50 g
- Organic lemon 1 pc
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
- Vegan gnocchi 800 g
Instructions
- 1. Heat 1 tsp oil in a pan over medium heat and toast the pine nuts in it for about 2 minutes, until golden brown. Transfer the pine nuts to a plate to cool. Leave the pan uncleaned.
- 2. Wash the wild garlic and parsley, shake them dry, remove the thick stems from the parsley, and chop both roughly. Rinse the lemon thoroughly, grate about 1 tsp of zest, halve it, and squeeze out the juice.
- 3. In a tall container, blend the herbs, pine nuts, 1 tbsp lemon juice, and 4 tbsp oil until smooth. Season with salt, pepper, and sugar. If needed, add 1-2 tbsp water to loosen the consistency.
- 4. Heat 2 tbsp oil in the pan over high heat and pan-fry the gnocchi in it for about 8 minutes until golden yellow and crispy. Lightly salt the gnocchi.
- 5. Mix the gnocchi with the pesto in the pan and season everything with salt and pepper. Serve the dish with some lemon zest on top. Enjoy your meal!
