  2. 2. Peel the garlic and slice it thinly.
  3. 3. Heat 1 tablespoon of oil in a pan over medium heat.
  4. 4. Fry the garlic slices for about 2 minutes until golden brown, but not too dark.
  5. 5. Place the fried garlic together with the pan oil into a tall container.
  6. 6. Blend the mixture until smooth.
  7. 7. Stir sour cream into the garlic puree mixture.
  8. 8. Season the dip with salt and cayenne pepper.
  9. 9. Wash the shrimp and pat them dry with a kitchen towel.
  10. 10. Heat the pan again with 1 tablespoon of oil over high heat.
  11. 11. Fry the shrimp for about 3 minutes.
  12. 12. Season the shrimp with salt and cayenne pepper.
  13. 13. Sprinkle the shrimp with sugar and let them caramelize briefly.
  14. 14. Deglaze the pan with rum.
  15. 15. Bring the mixture to a boil once.
  16. 16. Taste the shrimp one last time and adjust seasoning if needed.
  17. 17. Serve the warm shrimp together with the cold garlic dip.
