🍰 Baked Vegan Carrot Cake Donuts

Ingredients
- Carrots 1 pc.
- Lemons 1 pc.
- Wheat flour, Type 405 280 g
- Baking powder 1.5 tsp
- Sugar 110 g
- Salt 0.25 tsp
- Cinnamon 0.5 tsp
- Oat drink 100 ml
- Apple sauce 2 tbsp
- Margarine, vegan 4 tbsp
- Vanilla extract 1 tsp
- Icing sugar 60 g
- Almonds, whole 3 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the carrot thoroughly.
- 3. Remove the ends of the carrot.
- 4. Grate the carrot coarsely.
- 5. Set the grated carrot aside.
- 6. Wash the lemon.
- 7. Cut the lemon in half.
- 8. Squeeze the juice from the lemon.
- 9. Take a bowl.
- 10. Add flour to the bowl.
- 11. Add baking powder to the bowl.
- 12. Add sugar to the bowl.
- 13. Add salt to the bowl.
- 14. Add cinnamon to the bowl.
- 15. Stir the dry ingredients in the bowl.
- 16. Add oat drink to the bowl.
- 17. Add apple puree to the bowl.
- 18. Add two tablespoons of margarine to the bowl.
- 19. Add one teaspoon of vanilla extract to the bowl.
- 20. Mix the wet ingredients with the dry ones.
- 21. Take 75 grams of the grated carrot.
- 22. Fold the 75 grams of carrot into the batter.
- 23. Set aside some carrot shavings for decoration.
- 24. Grease a donut pan with margarine.
- 25. Fill the batter evenly into the donut pan.
- 26. Bake the carrot cake donuts for about 15 minutes in the oven.
- 27. Let the finished donuts rest in the pan for about 10 minutes.
- 28. Turn the donuts out onto a rack.
- 29. Let the donuts cool completely.
- 30. Take a clean bowl for the frosting.
- 31. Add powdered sugar to the bowl.
- 32. Take about one teaspoon of the remaining lemon juice.
- 33. Mix the powdered sugar with the lemon juice.
- 34. Add about half to one tablespoon of oat drink if the mixture is too thick.
- 35. Mix everything into a homogeneous, thick mass.
- 36. Chop the almonds coarsely.
- 37. Dip the cooled donuts halfway into the frosting.
- 38. Place the frosted donuts back on the rack.
- 39. Decorate the donuts as you like with the chopped almonds.
- 40. Decorate the donuts with the reserved carrot shavings.
