🍽️ Oven Sweet Potato Cubes with Spicy Pak Choi and Crispy Onions

Ingredients
- Sweet potatoes 1 kg
- Oil 5 tbsp
- Salt Pinch
- Pepper, black ground Pinch
- Pak Choi 4 pcs
- Ginger, fresh 10 g
- Zucchini 1 pc
- Organic Limes 1 pcs
- Onions, yellow 2 pcs
- Wheat flour, Type 405 4 tbsp
- Butter 2 tbsp
- Vegetable broth 100 ml
- Soy sauce 3 tbsp
- Chili, ground 0.25 tsp
- Sugar 1 tbsp
Instructions
- 1. Preheat your oven to 220 degrees Celsius fan mode.
- 2. Peel the sweet potatoes.
- 3. Cut the sweet potatoes into small cubes.
- 4. Place the sweet potato cubes on a baking sheet.
- 5. Add 2 tablespoons of oil.
- 6. Season everything with salt and pepper.
- 7. Bake the sweet potatoes in the oven for about 20 minutes.
- 8. Wash the Pak Choi thoroughly.
- 9. Trim the hard root ends at the bottom of the Pak Choi thinly.
- 10. Divide the Pak Choi into quarters or sixths depending on its size.
- 11. Peel the ginger.
- 12. Cut the ginger into small cubes.
- 13. Wash the zucchini.
- 14. Cut off the ends of the zucchini.
- 15. Slice the zucchini into long, thin strips using a vegetable peeler.
- 16. Cut the lime in half.
- 17. Squeeze the juice from the lime.
- 18. Peel the onion.
- 19. Slice the onion into thin rings.
- 20. Put some flour on a plate.
- 21. Season the flour lightly with salt and pepper.
- 22. Toss the onion rings in the seasoned flour until coated.
- 23. Heat 2 tablespoons of oil and some butter in a pan over medium heat.
- 24. Fry the onion rings for about 3 minutes until golden brown.
- 25. Place the fried onions on kitchen paper to absorb excess fat.
- 26. Wipe the used pan clean.
- 27. Heat 1 tablespoon of oil in the pan over high heat.
- 28. Sauté the ginger for about 1 minute.
- 29. Deglaze the pan with broth.
- 30. Add soy sauce.
- 31. Add 2 tablespoons of lime juice.
- 32. Season the sauce with chili and sugar.
- 33. Add the Pak Choi to the pan.
- 34. Let the vegetables simmer on low heat for about 2 minutes.
- 35. Remove the pan from the heat.
- 36. Add the zucchini strips to the pan.
- 37. Toss everything well to mix it.
- 38. Let the vegetables warm up for about 2 minutes, but do not boil them further.
- 39. Adjust the seasoning of the vegetables with salt and pepper.
- 40. Remove the sweet potato cubes from the oven.
- 41. Place the sweet potatoes on the plates.
- 42. Add the Pak Choi and zucchini vegetables.
- 43. Garnish the dish with the fried onions.
- 44. Serve the food immediately.
