  1. 1. Preheat the oven to 220 °C (top/bottom heat). Thoroughly clean the sweet potatoes and cut them into even wedges about 2 cm wide, leaving the skin on.
  2. 2. Place the wedges on a baking sheet lined with baking paper and toss with 2 tbsp oil and fries seasoning. Spread the potatoes evenly so they do not touch. Bake in the oven for about 25 minutes, turning once after 12 minutes.
  3. 3. Cut the onions in half, peel, and slice into wedges. Wash the parsley, shake off excess water, pluck the leaves from the stems, and chop. Cut the chorizo into small cubes. Peel the garlic. Cut the lime in half and squeeze out the juice.
  4. 4. In a tall container, puree the soy drink, 1 tbsp lime juice, mustard, and garlic. While mixing continuously, add the oil in a thin stream until the mixture is creamy. Season with salt, cayenne pepper, and a little lime juice.
  5. 5. Heat a pan to high temperature and heat 1 tbsp oil. Sauté the onions together with the chorizo for about 5 minutes and season to taste.
  6. 6. Take the sweet potato wedges out of the oven and arrange them on plates. Garnish with the chorizo, parsley, and aioli, and serve. Enjoy your meal!
