Ingredients
- black salsify, from the jar 500 g
- Parmesan, grated 100 g
- wheat flour, Type 405 100 g
- eggs 1 pcs
- salt pinch
- pepper, black ground pinch
- breadcrumbs 100 g
- oil 100 ml
- thyme, fresh 15 g
Instructions
- 1. Place the salsify in a colander and let it drain well.
- 2. Prepare four shallow plates for the breading.
- 3. Place 50 g of grated Parmesan on the first plate.
- 4. Put the flour on the second plate.
- 5. Whisk the egg with salt and pepper on the third plate.
- 6. Place the breadcrumbs on the fourth plate.
- 7. Coat the salsify first in the Parmesan.
- 8. Then coat them in the flour.
- 9. Next, dip them into the egg mixture.
- 10. Finally, coat them in the breadcrumbs.
- 11. Heat oil in a frying pan on the highest setting.
- 12. Fry the salsify for about 2 minutes until golden brown.
- 13. Wash the thyme and dry it.
- 14. Pluck the thyme leaves from the stems.
- 15. Let the fried salsify drain on kitchen paper.
- 16. Arrange the salsify on plates.
- 17. Sprinkle them with Parmesan and thyme.
