  1. 1. Place the salsify in a colander and let it drain well.
  2. 2. Prepare four shallow plates for the breading.
  3. 3. Place 50 g of grated Parmesan on the first plate.
  4. 4. Put the flour on the second plate.
  5. 5. Whisk the egg with salt and pepper on the third plate.
  6. 6. Place the breadcrumbs on the fourth plate.
  7. 7. Coat the salsify first in the Parmesan.
  8. 8. Then coat them in the flour.
  9. 9. Next, dip them into the egg mixture.
  10. 10. Finally, coat them in the breadcrumbs.
  11. 11. Heat oil in a frying pan on the highest setting.
  12. 12. Fry the salsify for about 2 minutes until golden brown.
  13. 13. Wash the thyme and dry it.
  14. 14. Pluck the thyme leaves from the stems.
  15. 15. Let the fried salsify drain on kitchen paper.
  16. 16. Arrange the salsify on plates.
  17. 17. Sprinkle them with Parmesan and thyme.
