  1. 1. Thaw the shrimp overnight in the refrigerator.
  2. 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  3. 3. Rinse the shrimp under running water.
  4. 4. Pat the shrimp dry with a kitchen towel.
  5. 5. Cut the passion fruit halves lengthwise.
  6. 6. Scoop out the passion fruit pulp with a spoon.
  7. 7. Set the fruit pulp aside.
  8. 8. Wash the thyme sprigs under cold water.
  9. 9. Shake the thyme sprigs dry.
  10. 10. Strip the thyme leaves from the stems.
  11. 11. Place the bread in the preheated oven.
  12. 12. Bake the bread for about 8 minutes.
  13. 13. Remove the bread from the oven when it is golden brown.
  14. 14. Heat 2 tablespoons of butter in a pan over medium heat.
  15. 15. Fry the shrimp in the hot butter.
  16. 16. Fry the shrimp for about 3 minutes on the first side.
  17. 17. Turn the shrimp and fry for another 3 minutes.
  18. 18. Place the cooked shrimp in a bowl.
  19. 19. Add the prepared passion fruit pulp to the shrimp.
  20. 20. Add the remaining butter to the mixture.
  21. 21. Season the mixture with salt to taste.
  22. 22. Season the mixture with cayenne pepper to taste.
  23. 23. Add the thyme leaves to the mixture.
  24. 24. Mix all ingredients well together.
  25. 25. Serve the shrimp together with the passion fruit salsa.
  26. 26. Serve the toasted baguette alongside.
