  1. 1. Melt 2 tablespoons of butter in a pan and let it cool down.
  2. 2. Mix wheat flour, spelt flour, and 1 level teaspoon of salt in a bowl.
  3. 3. Whisk the eggs and add them to the flour mixture.
  4. 4. Add the cooled melted butter, milk, and water.
  5. 5. Stir everything well until you have a smooth batter.
  6. 6. Cover the batter and let it rest for about 45 minutes.
  7. 7. Cut the cooked ham into wide strips.
  8. 8. Wash the tomatoes and cut them into quarters.
  9. 9. Wipe the mushrooms with a kitchen towel if necessary and slice them.
  10. 10. Wash the thyme, shake it dry, and strip the leaves off the stems.
  11. 11. Roughly chop the thyme leaves.
  12. 12. Heat 1 tablespoon of butter in a pan over medium to high heat.
  13. 13. Sauté the mushroom slices together with the thyme for about 3 to 5 minutes.
  14. 14. Season the mushrooms with salt and pepper.
  15. 15. Warm a clean pan over medium heat.
  16. 16. Lightly brush the pan with some butter.
  17. 17. Pour a ladle of batter into the pan.
  18. 18. Swirl the pan to spread the batter evenly and thinly.
  19. 19. Cook the galette for about 1 to 2 minutes.
  20. 20. Flip the galette over.
  21. 21. Top the galette with some ham strips and the mushrooms.
  22. 22. Sprinkle cheese over the filling.
  23. 23. Cook the galette for another 1 to 2 minutes until the cheese melts.
  24. 24. Fold the edges of the galette over the filling.
  25. 25. Keep the finished galette warm.
  26. 26. Repeat the process with the remaining batter for the rest of the galettes.
  27. 27. Serve the galettes with the quartered tomatoes.
