🍳 Mushroom-Ham Galettes

Ingredients
- butter 4 tbsp
- wheat flour, Type 405 125 g
- spelt flour, Type 630 125 g
- salt pinch
- eggs 2 pcs
- milk 250 ml
- water 250 ml
- cooked ham 150 g
- cherry tomatoes 200 g
- white mushrooms 400 g
- thyme, fresh 5 g
- pepper, black ground pinch
- grated Emmental cheese 200 g
Instructions
- 1. Melt 2 tablespoons of butter in a pan and let it cool down.
- 2. Mix wheat flour, spelt flour, and 1 level teaspoon of salt in a bowl.
- 3. Whisk the eggs and add them to the flour mixture.
- 4. Add the cooled melted butter, milk, and water.
- 5. Stir everything well until you have a smooth batter.
- 6. Cover the batter and let it rest for about 45 minutes.
- 7. Cut the cooked ham into wide strips.
- 8. Wash the tomatoes and cut them into quarters.
- 9. Wipe the mushrooms with a kitchen towel if necessary and slice them.
- 10. Wash the thyme, shake it dry, and strip the leaves off the stems.
- 11. Roughly chop the thyme leaves.
- 12. Heat 1 tablespoon of butter in a pan over medium to high heat.
- 13. Sauté the mushroom slices together with the thyme for about 3 to 5 minutes.
- 14. Season the mushrooms with salt and pepper.
- 15. Warm a clean pan over medium heat.
- 16. Lightly brush the pan with some butter.
- 17. Pour a ladle of batter into the pan.
- 18. Swirl the pan to spread the batter evenly and thinly.
- 19. Cook the galette for about 1 to 2 minutes.
- 20. Flip the galette over.
- 21. Top the galette with some ham strips and the mushrooms.
- 22. Sprinkle cheese over the filling.
- 23. Cook the galette for another 1 to 2 minutes until the cheese melts.
- 24. Fold the edges of the galette over the filling.
- 25. Keep the finished galette warm.
- 26. Repeat the process with the remaining batter for the rest of the galettes.
- 27. Serve the galettes with the quartered tomatoes.
