🍽️ Crispy Goose Breast with Bread Dumplings and Red Cabbage

Ingredients
- Goose breast, frozen 600 g
- Apples, red 1 pc.
- Onions, yellow 2 pcs.
- Salt pinch
- Oil 4 tbsp
- Red cabbage from the jar 600 g
- Red wine, dry 150 ml
- Bay leaves, dried 1 pc.
- Water 300 ml
- Roast sauce, powder 3 tbsp
- Bread dumpling mix 200 g
Instructions
- 1. Let the goose breast thaw overnight in the refrigerator.
- 2. Preheat the oven to 160 degrees Celsius (top and bottom heat).
- 3. Wash the apple, cut it into quarters, and remove the core and seeds.
- 4. Dice the apple roughly.
- 5. Halve the onions, peel them, and cut them into strips.
- 6. Wash the goose breast and pat it dry with a kitchen towel.
- 7. Score the skin side of the goose breast in a diamond pattern with a sharp knife.
- 8. Season the goose breast generously with salt.
- 9. Heat a frying pan on high heat without fat.
- 10. Fry the goose breast for about 5 minutes on the skin side until crispy.
- 11. Place the breast on a baking sheet lined with baking paper.
- 12. Cook the goose breast in the oven for about 45 minutes.
- 13. Heat 2 tablespoons of oil in a pot on medium heat.
- 14. Sauté half of the onion strips together with the apple for about 3 minutes.
- 15. Add the red cabbage, 50 milliliters of red wine, and a bay leaf.
- 16. Let the vegetables simmer on low heat for about 15 minutes.
- 17. Heat 2 tablespoons of oil in another pot on medium heat.
- 18. Fry the remaining onion strips for about 2 minutes.
- 19. Deglaze the onions with 100 milliliters of red wine.
- 20. Top up the sauce with water.
- 21. Bring the liquid to a boil.
- 22. Stir in the roast sauce powder.
- 23. Let the sauce simmer gently.
- 24. Season the sauce with salt and pepper to taste.
- 25. Shortly before the goose breast is done, bring salted water to a boil in a pot with a lid.
- 26. Prepare the bread dumplings according to the instructions on the package.
- 27. Plate the goose breast with bread dumplings and red cabbage.
- 28. Serve the dish with the roast sauce.
