  3. 3. Wash the apple, cut it into quarters, and remove the core and seeds.
  4. 4. Dice the apple roughly.
  5. 5. Halve the onions, peel them, and cut them into strips.
  6. 6. Wash the goose breast and pat it dry with a kitchen towel.
  7. 7. Score the skin side of the goose breast in a diamond pattern with a sharp knife.
  8. 8. Season the goose breast generously with salt.
  9. 9. Heat a frying pan on high heat without fat.
  10. 10. Fry the goose breast for about 5 minutes on the skin side until crispy.
  11. 11. Place the breast on a baking sheet lined with baking paper.
  12. 12. Cook the goose breast in the oven for about 45 minutes.
  13. 13. Heat 2 tablespoons of oil in a pot on medium heat.
  14. 14. Sauté half of the onion strips together with the apple for about 3 minutes.
  15. 15. Add the red cabbage, 50 milliliters of red wine, and a bay leaf.
  16. 16. Let the vegetables simmer on low heat for about 15 minutes.
  17. 17. Heat 2 tablespoons of oil in another pot on medium heat.
  18. 18. Fry the remaining onion strips for about 2 minutes.
  19. 19. Deglaze the onions with 100 milliliters of red wine.
  20. 20. Top up the sauce with water.
  21. 21. Bring the liquid to a boil.
  22. 22. Stir in the roast sauce powder.
  23. 23. Let the sauce simmer gently.
  24. 24. Season the sauce with salt and pepper to taste.
  25. 25. Shortly before the goose breast is done, bring salted water to a boil in a pot with a lid.
  26. 26. Prepare the bread dumplings according to the instructions on the package.
  27. 27. Plate the goose breast with bread dumplings and red cabbage.
