🍰 Football Woopie Pies

Ingredients
- butter 300 g
- brown sugar 150 g
- salt pinch
- eggs 1 pc.
- buttermilk 150 ml
- cocoa powder 70 g
- wheat flour, type 405 200 g
- baking powder 1 tsp
- powdered sugar 250 g
- cinnamon 1 tsp
- lemons 1 pc.
Instructions
- 1. Melt 100 grams of butter in a pot over medium heat.
- 2. Whisk sugar, a pinch of salt, and an egg in a bowl with a hand mixer and whisk for about 5 minutes until the mixture is creamy.
- 3. Stir the melted butter and buttermilk into the egg mixture.
- 4. Mix cocoa powder, flour, and baking powder in a separate bowl.
- 5. Briefly fold the flour mixture into the batter.
- 6. Place the dough in the refrigerator for about 20 minutes.
- 7. Preheat the oven to 180 degrees Celsius (convection mode).
- 8. Form 20 small, round dough mounds using two teaspoons.
- 9. Place the dough mounds with plenty of space between them on baking sheets lined with baking paper.
- 10. Bake the trays one after the other for about 12 minutes in the oven.
- 11. Remove the pies from the oven when the edges look slightly crispy.
- 12. Let the pies cool on the tray for a few minutes.
- 13. Transfer the pies to a wire rack and let them cool completely.
- 14. Beat 200 grams of butter in a bowl with a hand mixer and whisk until creamy.
- 15. Add powdered sugar to the butter gradually.
- 16. Season the buttercream with salt and cinnamon.
- 17. Chill the buttercream for a while.
- 18. Halve a lemon and squeeze out the juice.
- 19. Whisk 5 tablespoons of powdered sugar with 2 tablespoons of lemon juice in a bowl.
- 20. Fill the icing into a freezer bag.
- 21. Cut off a small corner of the freezer bag.
- 22. Spread the buttercream onto 10 Woopie Pies up to the edge.
- 23. Top the spread pies with the remaining 10 pies.
- 24. Decorate the pies with the icing from the bag to make them look like footballs.
- 25. Serve the finished pies and enjoy!
