  1. 1. Melt 100 grams of butter in a pot over medium heat.
  2. 2. Whisk sugar, a pinch of salt, and an egg in a bowl with a hand mixer and whisk for about 5 minutes until the mixture is creamy.
  3. 3. Stir the melted butter and buttermilk into the egg mixture.
  4. 4. Mix cocoa powder, flour, and baking powder in a separate bowl.
  5. 5. Briefly fold the flour mixture into the batter.
  6. 6. Place the dough in the refrigerator for about 20 minutes.
  7. 7. Preheat the oven to 180 degrees Celsius (convection mode).
  8. 8. Form 20 small, round dough mounds using two teaspoons.
  9. 9. Place the dough mounds with plenty of space between them on baking sheets lined with baking paper.
  10. 10. Bake the trays one after the other for about 12 minutes in the oven.
  11. 11. Remove the pies from the oven when the edges look slightly crispy.
  12. 12. Let the pies cool on the tray for a few minutes.
  13. 13. Transfer the pies to a wire rack and let them cool completely.
  14. 14. Beat 200 grams of butter in a bowl with a hand mixer and whisk until creamy.
  15. 15. Add powdered sugar to the butter gradually.
  16. 16. Season the buttercream with salt and cinnamon.
  17. 17. Chill the buttercream for a while.
  18. 18. Halve a lemon and squeeze out the juice.
  19. 19. Whisk 5 tablespoons of powdered sugar with 2 tablespoons of lemon juice in a bowl.
  20. 20. Fill the icing into a freezer bag.
  21. 21. Cut off a small corner of the freezer bag.
  22. 22. Spread the buttercream onto 10 Woopie Pies up to the edge.
  23. 23. Top the spread pies with the remaining 10 pies.
  24. 24. Decorate the pies with the icing from the bag to make them look like footballs.
  25. 25. Serve the finished pies and enjoy!
