🍰 Football Sour Cream Cake

Ingredients
- lemons 1 pc.
- butter 250 g
- sugar 350 g
- vanilla sugar 1 packet
- eggs 5 pc.
- wheat flour, Type 405 350 g
- baking powder 1 packet
- salt pinch
- milk 200 ml
- leaf gelatin 8 pc.
- mandarins from the can 300 g
- sour cream 600 g
- whipping cream 200 g
- apricot jam 4 tbsp
- raspberry jam 4 tbsp
- blueberry jam 4 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the lemon thoroughly under hot water.
- 3. Grate about one teaspoon of fine lemon zest.
- 4. Cut the lemon in half and squeeze out the juice.
- 5. Beat soft butter with a hand mixer and whisk until fluffy.
- 6. Gradually add 200 grams of sugar, vanilla sugar, and eggs.
- 7. Continue stirring until the mixture is fluffy.
- 8. Add flour, baking powder, salt, and the lemon zest.
- 9. Stir everything with milk to form a smooth batter.
- 10. Spread the batter onto a baking sheet lined with baking paper.
- 11. Bake the dough for about 25 minutes until golden brown.
- 12. Remove the cake from the oven.
- 13. Let the cake cool down completely.
- 14. Soak gelatin in cold water.
- 15. Drain the mandarin oranges in a sieve.
- 16. Let the mandarin oranges drain well.
- 17. Stir sour cream, 150 grams of sugar, and two tablespoons of lemon juice in a bowl.
- 18. Squeeze the gelatin lightly.
- 19. Dissolve the gelatin in a pot over low heat.
- 20. Stir two tablespoons of the sour cream mixture into the dissolved gelatin.
- 21. Quickly fold this gelatin mixture into the remaining sour cream mixture.
- 22. Set aside the sour cream mixture to cool.
- 23. Whip cream in a tall container with a hand mixer and whisk until stiff.
- 24. Gently fold the whipped cream into the sour cream mixture.
- 25. Gently fold in the mandarin oranges as well.
- 26. Spread the cream evenly over the cooled dough.
- 27. Place dollops of jam on the cream using a teaspoon.
- 28. Drag the handle of a spoon through the cream to create patterns.
- 29. Place the cake in the refrigerator for at least three hours.
- 30. Cut the cake into pieces for serving.
