🍽️ Fusilli with homemade tomato sauce and spinach

Ingredients
- onions, yellow 1 pc.
- thyme, fresh 5 g
- vine tomatoes 8 pc.
- olive oil 2 tbsp
- tomato paste 4 tbsp
- sugar pinch
- leaf spinach 300 g
- parmesan 50 g
- salt pinch
- fusilli 500 g
- pepper, black ground pinch
Instructions
- 1. Cut onions in half, peel and dice finely. Wash thyme, shake dry, pluck leaves from stems and chop finely. Wash tomatoes, halve, remove stem ends and chop coarsely.
- 2. Heat olive oil in a pot over medium heat and sauté onions together with tomato paste and thyme for about 2 minutes. Add tomato cubes, about 100 ml water and sugar, and simmer covered over medium heat, stirring occasionally, for about 15 minutes.
- 3. Place spinach in a colander, wash thoroughly and drain. Grate parmesan finely.
- 4. Bring about 5 liters of salted water to a boil in a large pot. Cook fusilli in boiling salted water for about 9 minutes until al dente. Drain and add fusilli together with spinach to the tomato sauce, mix well and season to taste with salt and pepper.
- 5. Plate the fusilli with spinach and tomato sauce and serve sprinkled with parmesan. Enjoy your meal!
