  1. 1. Drain the tofu and crumble it into small pieces using your hands.
  2. 2. Cut the onion in half and dice it finely.
  3. 3. Heat some oil in a frying pan over medium heat.
  4. 4. Lightly fry the tofu and onions for about 5 minutes, stirring constantly.
  5. 5. Season the mixture with the scramble seasoning.
  6. 6. Stir in the soy yogurt and let it simmer for 2 minutes.
  7. 7. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon.
  8. 8. Slice the avocado flesh into thin slices.
  9. 9. Wash the tomatoes and slice them as well.
  10. 10. Cut the cress from the bed.
  11. 11. Toast the sandwich slices to your liking.
  12. 12. Spread the tofu scramble evenly over the four bread slices.
  13. 13. Top the scramble with the avocado and tomato slices.
  14. 14. Sprinkle the cress on top and cover each sandwich with a second bread slice.
  15. 15. Cut the sandwiches diagonally in half and serve immediately.
