🍳 Tofu Scramble Sandwich with Fresh Avocado

Ingredients
- tofu, plain 400 g
- onions, yellow 1 pc.
- oil 3 tbsp
- scramble seasoning 1 tsp
- soy yogurt 8 tbsp
- avocado 1 pc.
- tomatoes 1 pc.
- microgreens 10 g
- sandwich toast 8 slices
Instructions
- 1. Drain the tofu and crumble it into small pieces using your hands.
- 2. Cut the onion in half and dice it finely.
- 3. Heat some oil in a frying pan over medium heat.
- 4. Lightly fry the tofu and onions for about 5 minutes, stirring constantly.
- 5. Season the mixture with the scramble seasoning.
- 6. Stir in the soy yogurt and let it simmer for 2 minutes.
- 7. Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon.
- 8. Slice the avocado flesh into thin slices.
- 9. Wash the tomatoes and slice them as well.
- 10. Cut the cress from the bed.
- 11. Toast the sandwich slices to your liking.
- 12. Spread the tofu scramble evenly over the four bread slices.
- 13. Top the scramble with the avocado and tomato slices.
- 14. Sprinkle the cress on top and cover each sandwich with a second bread slice.
- 15. Cut the sandwiches diagonally in half and serve immediately.
