🥤 Spring Quiche with Broccoli Florets and Cherry Tomatoes

Ingredients
- Quark 20% fat in dry matter 375 g
- Oil 2.5 tbsp
- Salt pinch
- Eggs 4 pcs
- Wheat flour, Type 405 280 g
- Broccoli 1 pc
- Cherry tomatoes 250 g
- Sugar 0.5 tsp
- Milk 3 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 2. Put 125 grams of quark, 2 tablespoons of oil, 1 teaspoon of salt, 1 egg, and flour into a bowl.
- 3. Knead the ingredients into a smooth dough.
- 4. Wrap the dough in cling film.
- 5. Let the dough rest in the refrigerator.
- 6. Bring 1 liter of salted water to a boil in a pot.
- 7. Cut the broccoli into small florets.
- 8. Wash the broccoli florets.
- 9. Cook the broccoli for about 3 minutes in the boiling water.
- 10. Drain the broccoli.
- 11. Shock the broccoli with cold water.
- 12. Let the broccoli drain well.
- 13. Wash the cherry tomatoes.
- 14. Halve the tomatoes.
- 15. Put the tomatoes in a bowl.
- 16. Mix the tomatoes with ½ teaspoon of sugar and a pinch of salt.
- 17. Put the remaining quark, 3 tablespoons of milk, and 3 eggs into a separate bowl.
- 18. Whisk the quark mixture well with a whisk.
- 19. Season the quark mixture well with salt and pepper.
- 20. Grease a springform pan or tart pan with 1 teaspoon of oil.
- 21. Dust a work surface with flour.
- 22. Roll out the dough thinly.
- 23. Place the dough in the pan.
- 24. Press the dough against the edges.
- 25. Prick the dough base several times with a fork.
- 26. Distribute the drained broccoli evenly over the dough.
- 27. Pour the quark-egg mixture around the broccoli florets.
- 28. Press the tomato halves into the quark mixture.
- 29. Season the quiche again with pepper and salt.
- 30. Place the quiche in the lower part of the oven.
- 31. Reduce the oven temperature to 220 degrees.
- 32. Bake the quiche for about 25 to 30 minutes until golden brown.
- 33. Take the finished quiche out of the pan.
- 34. Cut the quiche into pieces.
- 35. Serve the quiche.
