🍽️ Spring Potato Salad

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- vegetable broth 200 ml
- mustard 1 tbsp
- radishes 1 bunch
- kohlrabi 300 g
- chives, fresh 1 bunch
- sour cream 200 g
- pepper, black ground pinch
- walnut kernels 40 g
Instructions
- 1. Peel the potatoes, wash them thoroughly and cut into cubes of about 2 cm. Bring to a boil in a pot with salted water and then cook covered for about 15 minutes. Drain the potatoes while they are still hot, mix with a mixture of broth and mustard and let cool.
- 2. Clean the radishes under running water, remove the leaves and roots and cut into cubes. Peel the kohlrabi and also cube it. Wash the chives, dry them and cut into fine rolls.
- 3. In a bowl, mix the sour cream with the chives. Season with salt and pepper. Mix the potatoes, radishes and kohlrabi with the dressing and let it sit for a short time.
- 4. Coarsely chop the walnuts. Heat a pan over medium heat and roast the walnuts for about 3–4 minutes without fat. Sprinkle the spring potato salad with the roasted walnuts and serve. Enjoy your meal!
