🍰 Moist Fruit Cake

Ingredients
- Dried plums 50 g
- Soft apricots, dried and pitted 50 g
- Soft figs, dried 50 g
- Raisins 30 g
- Port wine 150 ml
- Eggs 4 pcs.
- Sugar 250 g
- Vanilla sugar 2 tbsp
- Salt pinch
- Sunflower oil 230 ml
- Wheat flour, Type 405 350 g
- Baking powder 1 tsp
- Butter 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cut the plums, figs, and apricots into small cubes.
- 3. Place the cut fruits together with the raisins in a bowl.
- 4. Pour 100 milliliters of port wine over the fruits and let them soak.
- 5. Separate the eggs so that you have distinct egg yolks and egg whites.
- 6. Beat the egg yolks with sugar, vanilla sugar, and salt until creamy.
- 7. Stir the oil into the egg yolk mixture.
- 8. Mix the flour with the baking powder.
- 9. Add the remaining port wine to the flour mixture.
- 10. Stir everything together to form a smooth batter.
- 11. Beat the egg whites in a clean bowl until stiff.
- 12. Gently fold half of the egg whites into the batter.
- 13. Add the remaining egg whites and fold them in.
- 14. Add the soaked fruits and their juice to the batter.
- 15. Mix the fruits evenly into the batter.
- 16. Grease a loaf pan with a length of 30 centimeters with butter.
- 17. Pour the batter into the prepared pan.
- 18. Bake the cake for about 80 minutes.
- 19. Slice the finished cake.
