🍽️ Sweet and sour vegetable skewers with zucchini, pineapple and feta

Ingredients
- zucchini 1 pc
- spring onions 1 bunch
- pepper, yellow 2 pc
- pineapple 0.5 pc
- feta 200 g
- lemons 1 pc
- agave syrup 1 tsp
- olive oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- mint, fresh 5 g
- yogurt, plain 150 g
Instructions
- 1. Wash the vegetables under running water.
- 2. Cut the zucchini into thick slices.
- 3. Cut the spring onions into large chunks.
- 4. Halve the peppers, remove the core and seeds.
- 5. Dice the peppers roughly.
- 6. Peel the pineapple with a knife.
- 7. Quarter the pineapple and remove the hard core.
- 8. Cut the pineapple into large chunks.
- 9. Dice the feta cheese roughly.
- 10. Wash the lemon under hot water.
- 11. Grate about one teaspoon of lemon zest finely.
- 12. Halve the lemon.
- 13. Squeeze the juice from the lemon.
- 14. Place the vegetables, pineapple and feta in a bowl.
- 15. Add the lemon zest, agave syrup, olive oil, salt and pepper.
- 16. Season the ingredients and mix everything well.
- 17. Thread the marinated ingredients onto the skewers as you like.
- 18. Wash the mint.
- 19. Pluck the mint leaves from the stems.
- 20. Finely chop the mint leaves.
- 21. Place the yogurt in a separate bowl.
- 22. Add the chopped mint, one tablespoon of lemon juice, salt and pepper to the yogurt.
- 23. Stir the dip ingredients well together.
- 24. Finally, adjust the taste of the yogurt dip.
- 25. Preheat the grill or a frying pan.
- 26. Grill the vegetable skewers for about five minutes on all sides.
- 27. Arrange the skewers on plates.
- 28. Serve the skewers with the yogurt mint dip.

- 30. Tip: You can also grill other fruits like peach, apricot or banana.
