  2. 2. Peel the garlic and chop it very finely.
  3. 3. Whisk the eggs in a bowl with the chopped garlic, salt, and pepper.
  4. 4. Place the flour on a plate.
  5. 5. Place the breadcrumbs on a second plate.
  6. 6. Coat each olive first in the flour.
  7. 7. Dip the floured olives into the egg-garlic mixture.
  8. 8. Roll the olives finally in the breadcrumbs.
  9. 9. Heat the oil in a pan on the highest setting.
  10. 10. Fry the olives in batches in the hot oil.
  11. 11. Fry them for about 1 minute until crispy.
  12. 12. Let the finished olives drain on kitchen paper.
  13. 13. Enjoy the olives warm or cold.
