🍲 Quick Tomato Basil Soup

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- carrots 2 pc.
- oil 2 tbsp
- tomato paste 2 tbsp
- vegetable broth 250 ml
- tomatoes, chopped 800 g
- salt pinch
- pepper, black ground pinch
- sugar pinch
- oregano, dried pinch
- basil, fresh 10 g
Instructions
- 1. Halve the onion and remove the outer skin. Dice the onion into small cubes.
- 2. Peel the garlic clove and chop it finely as well.
- 3. Wash and peel the carrots. Cut the vegetables into bite-sized pieces.
- 4. Heat the oil in a pan over high heat.
- 5. Sauté the onions, garlic, and carrots for about 3 minutes.
- 6. Stir in the tomato paste and cook it for 1 minute.
- 7. Pour the prepared broth into the pot.
- 8. Add the chopped tomatoes to the broth.
- 9. Season the soup with salt, pepper, sugar, and oregano.
- 10. Let the soup simmer for approx. 10 minutes over medium heat.
- 11. Wash the basil and shake it dry.
- 12. Pluck the basil leaves from the stems.
- 13. Finely chop the basil leaves.
- 14. Blend the tomato soup until creamy.
- 15. Adjust the seasoning of the soup if needed.
- 16. Serve the soup onto the plates.
- 17. Garnish the finished soup with the chopped basil.
