🍽️ Fresh Ravioli with Spicy Tomato Dip and Marinated Mozzarella

Ingredients
- Spring onions 1 bunch
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Olive oil 3 tbsp
- Sugar 1 tbsp
- Red wine, dry 100 ml
- Tomatoes, peeled from can 800 ml
- Water 100 ml
- Salt pinch
- Mozzarella 2 pcs.
- Oregano, dried pinch
- Pepper, black ground pinch
- Filled pasta, ricotta spinach 800 g
- Butter 2 tbsp
Instructions
- 1. Wash the spring onions thoroughly and cut off the root ends. Slice the onions into fine rings. Peel the red onion and cut it into small cubes. Peel the garlic and dice it finely as well.
- 2. Heat 2 tablespoons of olive oil in a pot over medium heat. Sauté the spring onions, red onions, and garlic for about 2 minutes until they become translucent.
- 3. Sprinkle sugar over the mixture and let it caramelize briefly. Deglaze with red wine. Boil the wine down completely over high heat.
- 4. Add the peeled tomatoes and water. Bring the sauce to a boil and reduce the heat to medium. Let the sauce simmer for about 15 minutes.
- 5. Stir the sauce occasionally. Mash the tomato pieces with a fork while doing so.
- 6. Bring about 5 liters of salted water to a boil in a large pot.
- 7. Pat the mozzarella dry. Cut it into pieces of about 0.5 cm or tear it roughly by hand.
- 8. Mix the mozzarella in a bowl with oregano and 1 tablespoon of olive oil. Season with salt and pepper.
- 9. Add the ravioli to the bubbling salted water after the sauce has been cooking for about 10 minutes. Cook them for approx. 5 minutes al dente (firm to the bite). Ensure the water is not boiling too vigorously.
- 10. Taste the tomato sauce and adjust with salt, pepper, and sugar. Add some cooking water if the sauce is too thick.
- 11. Heat butter and oregano in a frying pan over medium heat.
- 12. Drain the ravioli in a colander. Add them immediately to the oregano butter and toss gently for about 1 minute.
- 13. Serve the ravioli and sauce on deep plates. Sprinkle with the marinated mozzarella. Enjoy your meal!
