🍽️ Fresh Gnocchi with Tomato Sauce and Crispy Thyme Crumbs

Ingredients
- onions, yellow 1 pc.
- carrots 2 pcs.
- parsnips 1 pc.
- oil 2 tbsp.
- tomato paste 4 tbsp.
- tomatoes, pureed 800 g
- zucchini 1 pc.
- thyme, fresh 5 g
- basil, fresh 20 g
- butter 3 tbsp.
- breadcrumbs 5 tbsp.
- salt pinch
- pepper, black ground pinch
- gnocchi, fresh 800 g
- sugar pinch
Instructions
- 1. Halve the onion and peel it. Cut the onion flesh into fine cubes.
- 2. Peel the carrots and parsnips. Cut off the ends and grate the vegetables coarsely.
- 3. Heat one tablespoon of oil in a pot over medium heat.
- 4. Fry the onion cubes for about one minute.
- 5. Stir in the tomato paste and fry it for about one minute.
- 6. Add the puréed tomatoes, the grated vegetables, and about 200 milliliters of water to the pot.
- 7. Let the sauce simmer over low heat for about 20 minutes.
- 8. Wash the zucchini and cut off the ends.
- 9. Cut the zucchini into small cubes.
- 10. Rinse the thyme and shake it dry.
- 11. Pluck the thyme leaves from the stems and chop them finely.
- 12. Wash the basil and shake it dry.
- 13. Separate the basil leaves from the stems and chop them.
- 14. Heat the butter in a pan over medium heat.
- 15. Add the breadcrumbs to the pan and toast them for about three minutes until golden brown.
- 16. Stir the chopped thyme into the crumbs.
- 17. Place the crumbs on a kitchen towel to cool down.
- 18. Heat another tablespoon of oil in the pan over high heat.
- 19. Fry the zucchini cubes for about five minutes.
- 20. Season the zucchini with salt and pepper.
- 21. Bring about five liters of salted water to a boil in a large pot.
- 22. Add the gnocchi to the boiling but not bubbling water.
- 23. Cook the gnocchi for about four minutes until they rise to the surface.
- 24. Remove the gnocchi with a slotted spoon.
- 25. Let the gnocchi drain briefly.
- 26. Plate the gnocchi.
- 27. Add the fried zucchini and the chopped basil to the tomato sauce.
- 28. Season the sauce with sugar, salt, and pepper.
- 29. Distribute the sauce over the gnocchi.
- 30. Sprinkle the dish with the crispy thyme crumbs.
- 31. Serve the meal and enjoy your meal!
