🍲 Refreshing Gazpacho with Coriander and Crispy Garlic Bread

Ingredients
- Toast Bread 3 slices
- Vine Tomatoes 500 g
- Cucumbers 1 pc.
- Garlic Cloves 2 pcs.
- Onions, red 1 pc.
- Peppers, red 1 pc.
- Coriander, fresh 15 g
- Water 250 ml
- Olive Oil 3 tbsp
- Vinegar 1 tbsp
- Salt pinch
- Pepper, black ground pinch
- Baguette 1 pc.
- Margarine, vegan 2 tbsp
- Peppers, yellow 0.5 pc.
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Remove the crusts from the toast bread and cut it into small cubes.
- 3. Wash the tomatoes, remove the hard stem, and chop them roughly into cubes.
- 4. Wash the cucumber and chop it roughly into cubes as well.
- 5. Peel one clove of garlic and chop it roughly.
- 6. Halve the onion, peel it, and chop it roughly.
- 7. Wash the red pepper, halve it, remove the stem and seeds, and cut it into cubes.
- 8. Wash the coriander, shake it dry, and pick the leaves off the stems.
- 9. Place the toast bread, garlic, onion, coriander stems, cucumber, and tomatoes into a tall container.
- 10. Blend all ingredients until smooth.
- 11. Add cold water until the soup reaches the desired consistency.
- 12. Season the soup with two tablespoons of olive oil, vinegar, salt, and pepper.
- 13. Keep the soup cool until you are ready to serve it.
- 14. Slice the baguette in half lengthwise.
- 15. Peel another clove of garlic and grate it finely.
- 16. Mix margarine, one tablespoon of olive oil, and the grated garlic in a bowl.
- 17. Season the garlic mixture with salt and pepper.
- 18. Spread the garlic mixture onto the cut surfaces of the baguette.
- 19. Cut the baguette into rough pieces as you like.
- 20. Place the bread on a baking sheet lined with baking paper.
- 21. Bake the bread for about eight minutes until golden brown.
- 22. Wash the yellow pepper, remove the stem and seeds, and cut it into cubes.
- 23. Taste the gazpacho again and adjust the seasoning if necessary.
- 24. Serve the soup garnished with yellow pepper, coriander leaves, and the garlic bread.
