  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Remove the crusts from the toast bread and cut it into small cubes.
  3. 3. Wash the tomatoes, remove the hard stem, and chop them roughly into cubes.
  4. 4. Wash the cucumber and chop it roughly into cubes as well.
  5. 5. Peel one clove of garlic and chop it roughly.
  6. 6. Halve the onion, peel it, and chop it roughly.
  7. 7. Wash the red pepper, halve it, remove the stem and seeds, and cut it into cubes.
  8. 8. Wash the coriander, shake it dry, and pick the leaves off the stems.
  9. 9. Place the toast bread, garlic, onion, coriander stems, cucumber, and tomatoes into a tall container.
  10. 10. Blend all ingredients until smooth.
  11. 11. Add cold water until the soup reaches the desired consistency.
  12. 12. Season the soup with two tablespoons of olive oil, vinegar, salt, and pepper.
  13. 13. Keep the soup cool until you are ready to serve it.
  14. 14. Slice the baguette in half lengthwise.
  15. 15. Peel another clove of garlic and grate it finely.
  16. 16. Mix margarine, one tablespoon of olive oil, and the grated garlic in a bowl.
  17. 17. Season the garlic mixture with salt and pepper.
  18. 18. Spread the garlic mixture onto the cut surfaces of the baguette.
  19. 19. Cut the baguette into rough pieces as you like.
  20. 20. Place the bread on a baking sheet lined with baking paper.
  21. 21. Bake the bread for about eight minutes until golden brown.
  22. 22. Wash the yellow pepper, remove the stem and seeds, and cut it into cubes.
  23. 23. Taste the gazpacho again and adjust the seasoning if necessary.
  24. 24. Serve the soup garnished with yellow pepper, coriander leaves, and the garlic bread.
