🥗 Thai Meatballs with Sesame Sweet Potatoes, Peanut Rice and Minty Cucumber Salad

Ingredients
- Sweet potatoes 2 pcs.
- Salt pinch
- Oil 4 tbsp.
- Sesame, white 40 g
- Long-grain rice 300 g
- Mint, fresh 40 g
- Minced meat, mixed 600 g
- Curry powder pinch
- Organic limes 2 pcs.
- Sugar pinch
- Soy sauce 40 ml
- Cucumbers 2 pcs.
- Peanuts, roasted and salted 40 g
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the sweet potatoes thoroughly and peel them.
- 3. Cut the sweet potatoes into elongated pieces about 2 to 3 centimeters in size.
- 4. Place the sweet potato pieces in a baking dish.
- 5. Add 3 to 4 pinches of salt and 2 tablespoons of oil.
- 6. Mix everything well so that the sweet potatoes are evenly coated.
- 7. Place the dish in the oven and bake the sweet potatoes for 25 to 30 minutes.
- 8. Take a frying pan and add the sesame seeds.
- 9. Roast the sesame seeds over high heat for about 2 minutes.
- 10. Stir the sesame seeds occasionally while doing so.
- 11. Place the roasted sesame seeds on a plate and let them cool down.
- 12. Leave the frying pan uncleaned.
- 13. Put the rice into a pot.
- 14. Add 700 milliliters of salted water.
- 15. Bring the water to a boil.
- 16. Cover the pot.
- 17. Cook the rice over medium heat for about 15 minutes.
- 18. Wash the mint thoroughly.
- 19. Pluck the mint leaves from the stems.
- 20. Finely chop the mint leaves.
- 21. Take a bowl and add the minced meat.
- 22. Add curry powder.
- 23. Add 1 teaspoon of salt.
- 24. Add half of the chopped mint.
- 25. Mix everything well.
- 26. Form about 20 meatballs from the mixture.
- 27. Place the meatballs on a baking sheet.
- 28. Place the tray in the oven.
- 29. Bake the meatballs for about 15 minutes.
- 30. Wash the limes thoroughly.
- 31. Halve the limes.
- 32. Squeeze the juice from the lime halves.
- 33. Clean a clean bowl.
- 34. Add 4 tablespoons of lime juice to the bowl.
- 35. Add 2 tablespoons of sugar.
- 36. Add soy sauce.
- 37. Whisk the mixture with a whisk.
- 38. Stir until the sugar is completely dissolved.
- 39. Wash the cucumbers thoroughly.
- 40. Cut off the ends of the cucumbers.
- 41. Peel the cucumbers as desired.
- 42. Quarter the cucumbers lengthwise.
- 43. Remove the seeds from the cucumber quarters.
- 44. Cut the cucumber quarters diagonally into pieces about 0.5 centimeters thick.
- 45. Place the cucumber pieces in the bowl with the marinade.
- 46. Add the remaining mint.
- 47. Add half of the sesame seeds.
- 48. Mix everything well.
- 49. Chop the peanuts coarsely.
- 50. Fluff the rice a bit.
- 51. Add the chopped peanuts to the rice.
- 52. Season the rice with salt and pepper.
- 53. Take the meatballs out of the oven.
- 54. Take the baking dish with the sweet potatoes out of the oven.
- 55. Sprinkle the sweet potatoes with the remaining sesame seeds.
- 56. Mix the sweet potatoes well so that all pieces are covered.
- 57. Plate the meatballs.
- 58. Plate the sesame sweet potatoes.
- 59. Plate the mint cucumber salad.
- 60. Plate the peanut rice.
- 61. Serve the dish.
