🍽️ Frikadellen with Zucchini Kritharaki Pan

Ingredients
- Zucchini 2 pcs.
- Salt pinch
- Garlic cloves 1 pcs.
- Lemons 1 pcs.
- Onions, yellow 1 pcs.
- Parsley, fresh 20 g
- Ground beef 600 g
- Breadcrumbs 2 tbsp
- Eggs 1 pcs.
- Pepper, black ground pinch
- Paprika, sweet 0.5 tsp
- Oregano, dried 1.5 tsp
- Kritharaki pasta 500 g
- Oil 3 tbsp
- Yogurt, plain 150 g
Instructions
- 1. Wash the zucchini thoroughly and cut off the ends.
- 2. Grate the zucchini coarsely and mix it in a bowl with salt.
- 3. Let the salted zucchini sit aside for a few minutes.
- 4. Peel the garlic and chop it finely.
- 5. Rinse the lemon under hot water and grate about one teaspoon of the zest.
- 6. Halve the lemon and squeeze out the juice.
- 7. Halve the onion, peel it, and cut it into small cubes.
- 8. Wash the parsley and shake it dry.
- 9. Pluck the parsley leaves from the stems and chop them finely.
- 10. Put the minced meat, onion cubes, parsley, breadcrumbs, and egg into a bowl.
- 11. Mix the ingredients well together.
- 12. Season the mixture with salt, pepper, half a teaspoon of paprika, and one teaspoon of oregano.
- 13. Form meatballs with a diameter of about three centimeters from the meat mixture.
- 14. Bring about two liters of salted water to a boil in a pot.
- 15. Cook the kritharaki pasta in it for about ten minutes until al dente.
- 16. Drain the pasta in a sieve and let it drip dry.
- 17. Heat two tablespoons of oil in a pan over high heat.
- 18. Fry the meatballs for about seven minutes.
- 19. Wrap the cooked meatballs in aluminum foil and set them aside.
- 20. Heat another tablespoon of oil in the same pan over high heat.
- 21. Squeeze the zucchini lightly with your hands to remove the liquid.
- 22. Pour off the released liquid.
- 23. Fry the zucchini shreds together with half of the chopped garlic for about four minutes.
- 24. Add the drained kritharaki pasta and mix everything well.
- 25. Season the pan with salt, pepper, half a teaspoon of oregano, and the lemon zest.
- 26. Mix the yogurt in a bowl with the remaining garlic.
- 27. Season the yogurt with lemon juice, salt, and pepper.
- 28. Plate the meatballs, the zucchini pasta pan, and the garlic yogurt.
