  1. 1. Wash the zucchini thoroughly and cut off the ends.
  2. 2. Grate the zucchini coarsely and mix it in a bowl with salt.
  3. 3. Let the salted zucchini sit aside for a few minutes.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Rinse the lemon under hot water and grate about one teaspoon of the zest.
  6. 6. Halve the lemon and squeeze out the juice.
  7. 7. Halve the onion, peel it, and cut it into small cubes.
  8. 8. Wash the parsley and shake it dry.
  9. 9. Pluck the parsley leaves from the stems and chop them finely.
  10. 10. Put the minced meat, onion cubes, parsley, breadcrumbs, and egg into a bowl.
  11. 11. Mix the ingredients well together.
  12. 12. Season the mixture with salt, pepper, half a teaspoon of paprika, and one teaspoon of oregano.
  13. 13. Form meatballs with a diameter of about three centimeters from the meat mixture.
  14. 14. Bring about two liters of salted water to a boil in a pot.
  15. 15. Cook the kritharaki pasta in it for about ten minutes until al dente.
  16. 16. Drain the pasta in a sieve and let it drip dry.
  17. 17. Heat two tablespoons of oil in a pan over high heat.
  18. 18. Fry the meatballs for about seven minutes.
  19. 19. Wrap the cooked meatballs in aluminum foil and set them aside.
  20. 20. Heat another tablespoon of oil in the same pan over high heat.
  21. 21. Squeeze the zucchini lightly with your hands to remove the liquid.
  22. 22. Pour off the released liquid.
  23. 23. Fry the zucchini shreds together with half of the chopped garlic for about four minutes.
  24. 24. Add the drained kritharaki pasta and mix everything well.
  25. 25. Season the pan with salt, pepper, half a teaspoon of oregano, and the lemon zest.
  26. 26. Mix the yogurt in a bowl with the remaining garlic.
  27. 27. Season the yogurt with lemon juice, salt, and pepper.
  28. 28. Plate the meatballs, the zucchini pasta pan, and the garlic yogurt.
