🍲 Lemon Potatoes with Spicy Vegetable Sauce and Meatballs

Ingredients
- onions, yellow 1 pc.
- rolls 1 pc.
- minced meat, mixed 500 g
- pepper, black ground pinch
- salt pinch
- organic lemons 1 pc.
- soup vegetables 1 bunch
- potatoes, mostly waxy 800 g
- vegetable broth 600 ml
- butter 2 tbsp
- yogurt, plain 75 g
Instructions
- 1. Halve the onion and remove the skin.
- 2. Dice the onion into fine cubes.
- 3. Crush the bread roll in a blender or tear it into small crumbs.
- 4. Place the onion cubes and bread crumbs into a bowl.
- 5. Add the minced meat to the bowl.
- 6. Season the mixture with pepper and a pinch of salt.
- 7. Mix all ingredients thoroughly.
- 8. Lightly moisten your hands.
- 9. Shape 20 small balls from the mixture.
- 10. Place the meatball balls in the refrigerator.
- 11. Wash the lemon thoroughly under hot water.
- 12. Finely grate about one teaspoon of the lemon zest.
- 13. Halve the lemon.
- 14. Squeeze the juice from the lemon halves.
- 15. Wash the soup vegetables.
- 16. Cut off the hard ends if necessary.
- 17. Peel the vegetables.
- 18. Chop the vegetables into coarse cubes.
- 19. Wash the potatoes.
- 20. Place the unpeeled potatoes into a pot.
- 21. Fill the pot with lightly salted water.
- 22. Add the lemon zest to the pot.
- 23. Add a splash of lemon juice to the pot.
- 24. Bring everything to a boil with the lid on.
- 25. Reduce the heat to medium.
- 26. Cook the potatoes for about 20 minutes.
- 27. Check if the potatoes are soft.
- 28. Place the soup vegetables into a different pot.
- 29. Add the vegetable broth to the vegetables.
- 30. Bring the vegetable broth to a boil.
- 31. Season the sauce with salt and pepper.
- 32. Reduce the heat to low to medium.
- 33. Let the sauce simmer for about 15 to 20 minutes.
- 34. Add the meatballs to the vegetable broth.
- 35. Let the meatballs cook gently for about 12 minutes.
- 36. Ensure the broth does not boil vigorously.
- 37. Remove the meatballs with a slotted spoon.
- 38. Place the meatballs on a plate.
- 39. Puree the vegetables in the sauce.
- 40. Season the sauce to taste.
- 41. Drain the potatoes.
- 42. Let the potatoes steam dry in the pot for a short time.
- 43. Peel the potatoes if desired.
- 44. Halve the potatoes.
- 45. Add butter to the potatoes.
- 46. Add some lemon juice to the potatoes.
- 47. Season the potatoes with salt.
- 48. Stir the yogurt into the vegetable sauce.
- 49. Do not let the sauce with yogurt boil anymore.
- 50. Return the meatballs to the sauce.
- 51. Serve the meatballs with the lemon potatoes.
