🍳 French Toast with Maple Syrup

Ingredients
- Eggs 6 pcs.
- Milk 200 ml
- Heavy cream 100 ml
- Vanilla sugar 1 tsp
- Sugar 80 g
- Salt pinch
- Brioche loaf 0.5 pcs.
- Blueberries, fresh 100 g
- Organic lemon 1 pcs.
- Creme fraiche 200 g
- Butter 3 tbsp
- Maple syrup 50 ml
Instructions
- 1. Lightly whisk eggs, milk, cream, vanilla sugar, sugar, and a pinch of salt in a baking dish using a whisk.
- 2. Cut four evenly thick slices, about thumb-thick, from the brioche loaf.
- 3. Place the bread slices into the milk-egg mixture.
- 4. Let the slices soak up the liquid for about 5 minutes.
- 5. Turn the slices occasionally so they soak up the liquid evenly.
- 6. Rinse the blueberries under running water.
- 7. Wash the lemon thoroughly.
- 8. Grate about 1 teaspoon of fine lemon zest.
- 9. Halve the lemon and squeeze out the juice.
- 10. Mix the crème fraîche in a bowl with the lemon zest.
- 11. Season the cream to taste with some lemon juice and sugar.
- 12. Place the bowl in a cool spot until you are ready to serve the dish.
- 13. Melt 3 tablespoons of butter in a frying pan over medium heat until it foams slightly.
- 14. Let the excess liquid drip off the brioche slices at the edge of the baking dish.
- 15. Fry the slices in the pan for about 2 minutes on each side until golden yellow.
- 16. Plate the finished French toasts.
- 17. Add a spoonful of the lemon crème fraîche mixture on top.
- 18. Top with maple syrup and blueberries.
- 19. Serve the dish immediately while warm.
