  1. 1. Lightly whisk eggs, milk, cream, vanilla sugar, sugar, and a pinch of salt in a baking dish using a whisk.
  2. 2. Cut four evenly thick slices, about thumb-thick, from the brioche loaf.
  3. 3. Place the bread slices into the milk-egg mixture.
  4. 4. Let the slices soak up the liquid for about 5 minutes.
  5. 5. Turn the slices occasionally so they soak up the liquid evenly.
  6. 6. Rinse the blueberries under running water.
  7. 7. Wash the lemon thoroughly.
  8. 8. Grate about 1 teaspoon of fine lemon zest.
  9. 9. Halve the lemon and squeeze out the juice.
  10. 10. Mix the crème fraîche in a bowl with the lemon zest.
  11. 11. Season the cream to taste with some lemon juice and sugar.
  12. 12. Place the bowl in a cool spot until you are ready to serve the dish.
  13. 13. Melt 3 tablespoons of butter in a frying pan over medium heat until it foams slightly.
  14. 14. Let the excess liquid drip off the brioche slices at the edge of the baking dish.
  15. 15. Fry the slices in the pan for about 2 minutes on each side until golden yellow.
  16. 16. Plate the finished French toasts.
  17. 17. Add a spoonful of the lemon crème fraîche mixture on top.
  18. 18. Top with maple syrup and blueberries.
  19. 19. Serve the dish immediately while warm.
