🍳 Strawberry Franzbrötchen

Ingredients
- Milk 310 ml
- Yeast, fresh 0.5 pc.
- Sugar 200 g
- Wheat flour, Type 405 600 g
- Salt pinch
- butter 150 g
- Eggs 3 pc.
- Strawberry jam 200 g
Instructions
- 1. Heat 300 ml of milk in a pot for about 1 minute until it is lukewarm.
- 2. Add the yeast and 1 tbsp of sugar to the warm milk and stir until everything has dissolved.
- 3. Cover the pot and let the mixture rest for about 15 minutes.
- 4. Mix 190 g of sugar, flour, salt, and the cut-up butter in a bowl.
- 5. Add the yeast mixture and the eggs and knead everything into a smooth dough.
- 6. Cover the bowl with a clean kitchen towel.
- 7. Let the dough rise in a warm place for about 1 hour until its volume has approximately doubled.
- 8. Knead the dough again on a floured surface.
- 9. Roll the dough out into a rectangle of about 70 x 25 cm.
- 10. Spread the strawberry jam evenly over the dough.
- 11. Roll the rectangle tightly from the long side.
- 12. Cut the roll into about 16 equal-sized trapezoids.
- 13. Place the trapezoids on a baking sheet lined with baking paper.
- 14. Press the trapezoids slightly in the middle with a wooden spoon so that the cut surface faces upwards.
- 15. Let the Franzbrötchen rise for approx. 20 minutes.
- 16. Preheat the oven to 180 °C (top/bottom heat).
- 17. Brush the Franzbrötchen with the remaining milk.
- 18. Bake the Franzbrötchen in the oven for approx. 20 minutes until golden brown.
- 19. Let the Franzbrötchen cool down slightly afterwards and serve them.
