  1. 1. Heat 300 ml of milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Add the yeast and 1 tbsp of sugar to the warm milk and stir until everything has dissolved.
  3. 3. Cover the pot and let the mixture rest for about 15 minutes.
  4. 4. Mix 190 g of sugar, flour, salt, and the cut-up butter in a bowl.
  5. 5. Add the yeast mixture and the eggs and knead everything into a smooth dough.
  6. 6. Cover the bowl with a clean kitchen towel.
  7. 7. Let the dough rise in a warm place for about 1 hour until its volume has approximately doubled.
  8. 8. Knead the dough again on a floured surface.
  9. 9. Roll the dough out into a rectangle of about 70 x 25 cm.
  10. 10. Spread the strawberry jam evenly over the dough.
  11. 11. Roll the rectangle tightly from the long side.
  12. 12. Cut the roll into about 16 equal-sized trapezoids.
  13. 13. Place the trapezoids on a baking sheet lined with baking paper.
  14. 14. Press the trapezoids slightly in the middle with a wooden spoon so that the cut surface faces upwards.
  15. 15. Let the Franzbrötchen rise for approx. 20 minutes.
  16. 16. Preheat the oven to 180 °C (top/bottom heat).
  17. 17. Brush the Franzbrötchen with the remaining milk.
  18. 18. Bake the Franzbrötchen in the oven for approx. 20 minutes until golden brown.
  19. 19. Let the Franzbrötchen cool down slightly afterwards and serve them.
