🍰 Football Whoopie Pies

Ingredients
- butter 300 g
- brown sugar 150 g
- salt pinch
- eggs 1 pc.
- buttermilk 150 ml
- cocoa powder 70 g
- wheat flour, type 405 200 g
- baking powder 1 tsp
- powdered sugar 250 g
- cinnamon 1 tsp
- lemons 1 pc.
Instructions
- 1. Melt 100 grams of butter in a pot over medium heat.
- 2. Whisk sugar, salt, and one egg in a bowl with a hand mixer for about 5 minutes until the mixture is frothy.
- 3. Stir in the melted butter and buttermilk into the egg mixture.
- 4. Mix cocoa powder, flour, and baking powder, then briefly stir the dry ingredients into the dough.
- 5. Place the dough in the refrigerator for about 20 minutes.
- 6. Preheat the oven to 180 °C (convection mode).
- 7. Shape 20 small, elongated portions of dough using two teaspoons.
- 8. Place the dough portions on three baking sheets lined with baking paper, leaving enough space between them.
- 9. Bake the whoopie pies one batch at a time in the oven for about 12 minutes, until the edges are slightly crispy.
- 10. Let the whoopie pies cool on the baking sheet for a few minutes.
- 11. Transfer the whoopie pies to a wire rack and let them cool completely.
- 12. Beat 200 grams of butter in a bowl with a hand mixer until creamy.
- 13. Gradually work powdered sugar into the butter.
- 14. Season the buttercream with salt and cinnamon.
- 15. Place the buttercream in the refrigerator.
- 16. Halve a lemon and squeeze out the juice.
- 17. Whisk 5 tablespoons of powdered sugar with 2 tablespoons of lemon juice in a bowl.
- 18. Fill the sugar glaze into a freezer bag and cut off a small corner.
- 19. Spread the buttercream onto 10 of the whoopie pies up to the edge.
- 20. Top the filled whoopie pies with the remaining 10.
- 21. Decorate the whoopie pies with the sugar glaze in the shape of footballs.
- 22. Serve the whoopie pies and enjoy!
