🍳 Crispy Herb Focaccia from the Air Fryer

Ingredients
- yeast, fresh 15 g
- water 320 ml
- wheat flour Type 550 500 g
- salt 2 tsp
- olive oil 8 tbsp
- rosemary, fresh 5 g
- thyme, fresh 5 g
- sea salt pinch
- pepper, black ground pinch
- basil, fresh 10 g
- premium olives with lemon 150 g
- cherry tomatoes 200 g
- sugar pinch
Instructions
- 1. Fold two small bowls out of baking paper that fit exactly into your air fryer basket and are about 3 centimeters high.
- 2. Dissolve the yeast in lukewarm water and let the mixture rest covered for about 10 minutes.
- 3. Add flour, 2 teaspoons of salt, and 3 tablespoons of olive oil to the yeast mixture.
- 4. Process the ingredients with a hand mixer and a dough hook to form a smooth dough.
- 5. Divide the dough into two equal halves and place them in the prepared baking paper bowls.
- 6. Let the dough rise covered in a warm place for about 1 hour until it has doubled in size.
- 7. Wash the rosemary and thyme and shake them dry.
- 8. Pluck the needles and leaves from the stems.
- 9. Mix the herbs with 4 tablespoons of olive oil.
- 10. Press indentations regularly into the surface of the dough pieces with your fingers.
- 11. Distribute the herb oil evenly over the dough.
- 12. Sprinkle the focaccia with some coarse salt.
- 13. Place one focaccia in the basket of the air fryer.
- 14. Bake it at 160 degrees Celsius for 15 minutes.
- 15. Turn the focaccia over and bake for another 10 minutes at the same temperature.
- 16. Repeat the baking process with the second focaccia.
- 17. Wash the basil and shake it dry.
- 18. Pluck the basil leaves off.
- 19. Let the olives drain in a sieve.
- 20. Wash the tomatoes and halve them.
- 21. Mix the tomatoes with salt, pepper, 2 pinches of sugar, and 1 tablespoon of olive oil.
- 22. Fold the drained olives into the tomato mixture.
- 23. Sprinkle the tomato salad with the basil leaves.
- 24. Serve the focaccia together with the fresh tomato salad.
