🍽️ Focaccia with Roasted Vegetables

Ingredients
- yeast, fresh 0.5 pcs
- water 250 ml
- sugar 1 tsp
- wheat flour, Type 405 500 g
- salt pinch
- olive oil 10 tbsp
- carrots 5 pcs
- pepper, red 2 pcs
- garlic cloves 5 pcs
- rosemary, fresh 5 g
Instructions
- 1. Dissolve the yeast and sugar in lukewarm water in a bowl.
- 2. Let the yeast mixture rest covered for about 10 minutes.
- 3. Add flour, salt, and 2 tablespoons of oil to the bowl.
- 4. Knead the ingredients into a smooth dough.
- 5. Let the dough rise covered in a warm place for about 1 hour until it has doubled in size.
- 6. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 7. Peel the carrots and cut them into quarters lengthwise.
- 8. Wash the bell peppers, remove the stems and seeds, and cut them into quarters.
- 9. Peel the garlic.
- 10. Line a baking sheet with parchment paper.
- 11. Arrange the carrots, bell peppers, and garlic on the baking sheet.
- 12. Drizzle the vegetables with 2 tablespoons of oil.
- 13. Roast the vegetables in the oven for about 30 minutes.
- 14. Remove the vegetables from the oven and let them cool briefly.
- 15. Peel the bell peppers and cut them into strips.
- 16. Knead the dough once more briefly.
- 17. Sprinkle some flour on a work surface.
- 18. Roll out the dough on the floured surface until it matches the size of the baking sheet.
- 19. Oil the baking sheet.
- 20. Place the dough on the oiled baking sheet.
- 21. Distribute the roasted vegetables over the dough.
- 22. Gently crush the garlic with your palm.
- 23. Wash the rosemary and shake it dry.
- 24. Pluck the rosemary needles from the stems.
- 25. Sprinkle the rosemary needles over the focaccia.
- 26. Let the focaccia rise covered for another about 1 hour.
- 27. Preheat the oven to 225 degrees Celsius with top and bottom heat.
- 28. Press small indentations into the dough with your fingers.
- 29. Drizzle the remaining oil into the indentations.
- 30. Sprinkle a little salt over the focaccia.
- 31. Bake the focaccia for about 15 to 18 minutes until golden brown.
- 32. Remove the focaccia from the oven.
- 33. Cut it into pieces.
- 34. Serve the focaccia hot or warm.
