🍽️ Meatballs in Basil Cream Sauce with Potatoes and Broccoli

Ingredients
- potatoes, mostly waxy 1 kg
- salt pinch
- broccoli 1 pc.
- lemons 1 pc.
- basil, fresh 60 g
- rolls 1 pc.
- onions, yellow 1 pc.
- eggs 1 pc.
- ground pork 600 g
- pepper, black ground pinch
- chicken broth 1 L
- butter 2 tbsp
- wheat flour, Type 405 3 tbsp
- whipping cream 100 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes lengthwise into quarters.
- 3. Place the potato pieces in a pot with salted water.
- 4. Bring the water to a boil.
- 5. Cook the potatoes over medium heat for about 20 minutes.
- 6. Wash the broccoli thoroughly.
- 7. Separate the broccoli into small florets.
- 8. Add the broccoli to the potatoes after 15 minutes of cooking time.
- 9. Cook everything together until both vegetables are tender.
- 10. Drain the vegetables in a colander.
- 11. Let the vegetables drain well.
- 12. Wash the lemon.
- 13. Cut the lemon in half.
- 14. Squeeze the juice from the lemon.
- 15. Wash the basil.
- 16. Shake the basil dry.
- 17. Pluck the basil leaves from the stems.
- 18. Finely chop the basil leaves.
- 19. Place the bread rolls in a bowl.
- 20. Cover the bread rolls with lukewarm water.
- 21. Let the bread rolls soak for about 5 minutes.
- 22. Squeeze the soaked bread well.
- 23. Cut the onion in half.
- 24. Peel the onion halves.
- 25. Dice the onion finely.
- 26. Place the minced meat in a large bowl.
- 27. Add the egg to the minced meat.
- 28. Add the diced onion to the minced meat.
- 29. Add the squeezed bread to the minced meat.
- 30. Mix all ingredients for the meatballs well.
- 31. Season the meat mixture with salt.
- 32. Season the meat mixture with pepper.
- 33. Form balls about 4 cm in size from the mixture.
- 34. Place the broth in a pot.
- 35. Bring the broth to a boil.
- 36. Lower the meatballs into the simmering broth.
- 37. Cook the meatballs covered over low to medium heat.
- 38. Cook the meatballs for about 15 minutes.
- 39. Remove the cooked meatballs from the broth.
- 40. Melt the butter in a pot over medium heat.
- 41. Add the flour to the melted butter.
- 42. Sauté the flour for about 2 minutes.
- 43. Deglaze the flour mixture gradually with 500 ml of the meatball broth.
- 44. Stir constantly while doing so.
- 45. Season the sauce with salt.
- 46. Season the sauce with pepper.
- 47. Add the lemon juice to the sauce.
- 48. Add the cream to the sauce.
- 49. Let the sauce simmer gently for about 2 minutes.
- 50. Stir the chopped basil into the sauce.
- 51. Taste the sauce one last time and adjust seasoning.
- 52. Add the meatballs to the sauce.
- 53. Distribute the potatoes and broccoli onto the plates.
- 54. Serve the meatballs with the sauce alongside.
- 55. Serve the dish immediately.
