🍽️ Meatballs under a fluffy potato blanket

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- oil 2 tbsp
- tomatoes, chopped 400 g
- pepper, black ground pinch
- sugar pinch
- minced meat, mixed 600 g
- eggs 1 pc.
- breadcrumbs 3 tbsp
- herbs of Provence, dried pinch
- sour cream 150 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the peeled potatoes into coarse cubes.
- 3. Place the potato cubes in a pot with salted water.
- 4. Bring the water to a boil.
- 5. Cover the pot and cook the potatoes for about 20 minutes.
- 6. Cut an onion in half and peel it.
- 7. Dice the peeled onion finely.
- 8. Peel a clove of garlic.
- 9. Chop the garlic finely.
- 10. Heat some oil in a pot.
- 11. Add half of the onion cubes and the garlic to the hot oil.
- 12. Sauté the vegetables for about 2 minutes.
- 13. Deglaze the mixture with tomatoes.
- 14. Season the sauce with salt, pepper, and a pinch of sugar.
- 15. Let the sauce simmer on low heat for about 10 minutes.
- 16. Take a bowl and add the remaining onion and garlic cubes.
- 17. Add the minced meat to the bowl.
- 18. Add an egg to the bowl.
- 19. Add breadcrumbs to the bowl.
- 20. Season the mixture with salt and pepper.
- 21. Add herbs de Provence to the bowl.
- 22. Mix all ingredients in the bowl thoroughly.
- 23. Form small balls with a diameter of about 2 cm from the meat mixture.
- 24. Preheat the oven to 200 °C fan.
- 25. Drain the cooked potatoes.
- 26. Use a lid to keep the potatoes in the pot.
- 27. Add sour cream to the drained potatoes.
- 28. Season the potatoes with salt and pepper.
- 29. Mash the potatoes in the pot.
- 30. Place the tomato sauce in a baking dish.
- 31. Place the meatballs in the sauce.
- 32. Spread the mashed potatoes evenly over the meatballs.
- 33. Place the baking dish in the preheated oven.
- 34. Bake the dish for about 20 minutes.
- 35. Remove the baking dish from the oven.
- 36. Let the dish cool down for a short while.
