🍽️ Meatballs in Tomato Sauce - Albóndigas

Ingredients
- onions, yellow 2 pcs.
- garlic cloves 2 pcs.
- ground beef 600 g
- eggs 1 pcs.
- breadcrumbs 2 tbsp
- salt pinch
- rose paprika 1 tsp
- oil 4 tbsp
- chili, ground 0.5 tsp
- sugar pinch
- tomatoes, chopped 400 g
- vinegar 1 tbsp
- parsley, fresh 10 g
Instructions
- 1. Cut the onion in half, peel and dice it. Peel and mince the garlic.
- 2. In a bowl, combine half of the minced garlic with the ground meat, egg, breadcrumbs, salt, and 1/2 tsp paprika. Shape the mixture into small balls.
- 3. Heat 2 tablespoons of oil in a pan over high heat. Sear the meatballs for about 5 minutes on all sides. Then remove them from the pan and set aside.
- 4. In the same pan, heat another 2 tablespoons of oil over high heat and sauté the onion with garlic for about 2 minutes. Season with salt, paprika, chili, and sugar, then add the chopped tomatoes and vinegar and bring to a boil.
- 5. Add the meatballs to the tomato sauce and let everything simmer together for about 5 minutes. Wash the parsley, dry it, pluck the leaves from the stems, and chop. Taste the tomato sauce and serve sprinkled with parsley.
