🥗 Crispy Flammkuchen with Zucchini, Honey Onions and Crunchy Apple-Radish Salad

Ingredients
- Wheat flour, Type 405 600 g
- Water 400 ml
- Salt Pinch
- Oil 11 tbsp
- Zucchini 2 pcs
- Onions, red 2 pcs
- Honey 3 tbsp
- Balsamic vinegar, light 1 tbsp
- Herbs of Provence, dried 2 tsp
- Sour cream 200 g
- Apples, red 1 pc
- Radishes 1 bunch
- Chives, fresh 20 g
- Organic Limes 1 pc
- Mustard 1 tbsp
- Pepper, black ground Pinch
Instructions
- 1. Preheat the oven to 250 degrees Celsius using top and bottom heat.
- 2. Put flour, water, salt, and four tablespoons of oil into a bowl.
- 3. Knead the ingredients into a smooth dough.
- 4. Divide the dough into two equal balls.
- 5. Cover the dough balls with a kitchen towel and let them rest for 15 minutes.
- 6. Wash the zucchini and cut off the ends.
- 7. Dice the zucchini into small pieces.
- 8. Halve the onions and peel them.
- 9. Cut the onions into thin strips.
- 10. Put the onions into a bowl.
- 11. Mix the onions with two tablespoons of honey.
- 12. Add two tablespoons of balsamic vinegar.
- 13. Add two tablespoons of oil.
- 14. Mix the onions well with the ingredients.
- 15. Add the diced zucchini to the onion mixture.
- 16. Add another two tablespoons of oil.
- 17. Season the mixture with salt and herbs de Provence.
- 18. Mix everything well together.
- 19. Divide the two dough balls into equal portions.
- 20. Place baking paper on the baking sheets.
- 21. Roll out the dough halves thinly on the baking paper.
- 22. Lift the baking sheets with the dough and the paper.
- 23. Place the sheets in the preheated oven.
- 24. Spread the crème fraîche evenly over the Flammkuchen bases.
- 25. Put the zucchini-onion mixture on the crème fraîche.
- 26. Bake the Flammkuchen for about 20 minutes.
- 27. Swap the baking sheets after half the baking time.
- 28. Wash the apple.
- 29. Quarter the apple.
- 30. Remove the seeds from the apple.
- 31. Slice the apple into thin slices.
- 32. Wash the radishes.
- 33. Cut off the root ends of the radishes.
- 34. Slice the radishes into thin slices.
- 35. Wash the chives.
- 36. Shake the chives dry.
- 37. Cut the chives into thin rings.
- 38. Halve the lime.
- 39. Squeeze the juice from the lime.
- 40. Put two tablespoons of lime juice into a bowl.
- 41. Add one tablespoon of honey.
- 42. Add one tablespoon of mustard.
- 43. Add three tablespoons of oil.
- 44. Mix the dressing ingredients well.
- 45. Put the apple slices into the dressing bowl.
- 46. Add the radish slices.
- 47. Add the chive rings.
- 48. Mix the salad well.
- 49. Season the salad with salt and pepper.
- 50. Take the Flammkuchen out of the oven carefully.
- 51. Cut the Flammkuchen into pieces.
- 52. Place the Flammkuchen on plates.
- 53. Fill the salad into small bowls.
- 54. Serve the salad together with the Flammkuchen.
