Ingredients
- flour, Type 405 600 g
- water 300 ml
- salt 1 tsp
- oil 4 tbsp
- crème fraîche 150 g
- apricot jam 3 tbsp
- pepper, black ground pinch
- spring onions 1 bunch
- goat cheese roll 200 g
- parma ham 100 g
- chestnuts - peeled 200 g
Instructions
- 1. Preheat the oven to 250 degrees Celsius using top and bottom heat.
- 2. Put 600 grams of flour, 300 milliliters of water, one teaspoon of salt, and four tablespoons of oil into a bowl.
- 3. Knead the ingredients into a smooth dough.
- 4. Wrap the dough in cling film.
- 5. Let the dough rest at room temperature.
- 6. Stir 150 grams of crème fraîche with two tablespoons of apricot jam in a bowl.
- 7. Season the mixture with salt and pepper.
- 8. Wash the spring onions and shake them dry.
- 9. Cut off the root ends of the spring onions.
- 10. Slice the spring onions into thin rings.
- 11. Slice the goat cheese.
- 12. Tear the ham into coarse pieces.
- 13. Mix the chestnuts with one tablespoon of apricot jam in a bowl.
- 14. Divide the dough into two equal pieces.
- 15. Dust a work surface with flour.
- 16. Roll out each piece of dough evenly.
- 17. Place each dough onto a baking tray lined with baking paper.
- 18. Spread the crème fraîche mixture over the doughs.
- 19. Top the doughs with goat cheese.
- 20. Distribute the spring onions over the doughs.
- 21. Distribute the chestnuts over the doughs.
- 22. Distribute the ham over the doughs.
- 23. Bake the flammkuchen one after the other in the oven.
- 24. Bake them for about 12 to 15 minutes until they are crispy and golden brown.
- 25. Cut the flammkuchen into pieces.
- 26. Serve the flammkuchen immediately.
