🍽️ Flammkuchen with Red Onions, Walnuts, and Pear

Ingredients
- Wheat flour, Type 405 250 g
- Olive oil 3 tbsp
- Salt pinch
- Water 100 ml
- Onions, red 2 pcs
- Pears 2 pcs
- Walnut kernels 2 tbsp
- Eggs 2 pcs
- crème fraîche 200 g
- Pepper, black ground pinch
- Honey 1 tbsp
Instructions
- 1. Put flour, oil, salt, and water into a bowl.
- 2. Knead the ingredients vigorously until a smooth dough forms.
- 3. Wrap the dough ball in cling film.
- 4. Let the dough rest at room temperature for about 30 minutes.
- 5. Preheat the oven to 240 °C (convection mode).
- 6. Halve the red onions and peel them.
- 7. Slice the onions into thin rings.
- 8. Wash the pears thoroughly.
- 9. Quarter the pears and cut them into wedges.
- 10. Chop the walnuts coarsely.
- 11. Separate the eggs and use only the egg yolks.
- 12. Mix the crème fraîche with the egg yolks in a bowl.
- 13. Season the cream with salt and pepper.
- 14. Divide the dough into two equal parts.
- 15. Dust a work surface with flour.
- 16. Roll out each dough part on the floured surface.
- 17. Stretch the dough to a thickness of approx. 0.5 cm.
- 18. Spread the prepared crème fraîche over the dough.
- 19. Distribute the onion rings evenly on top.
- 20. Place the pear wedges on top.
- 21. Sprinkle the chopped walnuts over it.
- 22. Place the flammkuchen in the preheated oven.
- 23. Bake the flammkuchen for about 8 to 10 minutes.
- 24. Remove the flammkuchen when it is golden brown.
- 25. Drizzle some honey over the finished flammkuchen.
- 26. Serve the flammkuchen immediately.
