🍽️ Crispy Flammkuchen with Green Asparagus and Spring Onions

Ingredients
- green asparagus 1 bunch
- potatoes, mostly waxy 500 g
- salt pinch
- sour cream 300 g
- pepper, black ground pinch
- spring onions 1 bunch
- puff pastry 2 pcs
Instructions
- 1. Turn on the oven to 250 degrees Celsius with top and bottom heat and let it preheat.
- 2. Wash the green asparagus thoroughly.
- 3. Cut off the woody bottom ends of the asparagus.
- 4. Peel the bottom third of the asparagus stalks.
- 5. Wash the potatoes and peel them completely.
- 6. Slice the potatoes into rounds about 0.2 centimeters thick.
- 7. Put about 3 liters of water into a pot and salt it generously.
- 8. Bring the salted water to a boil.
- 9. Add the potato slices and the asparagus to the boiling water.
- 10. Cook the vegetables for about 5 minutes until they are tender but still firm to the bite.
- 11. Drain the vegetables in a colander.
- 12. Rinse the drained vegetables immediately with cold water to stop the cooking process.
- 13. Place the vegetables on kitchen paper to let them dry well.
- 14. Take a small bowl and put the sour cream in it.
- 15. Season the sour cream with a pinch of salt.
- 16. Add a pinch of pepper to the sour cream.
- 17. Wash the spring onions thoroughly.
- 18. Dry the spring onions well.
- 19. Slice the white parts of the spring onions into thin rings.
- 20. Slice the green parts of the spring onions into thin rings as well.
- 21. Set aside the green spring onion rings for later use.
- 22. Take the flammkuchen dough and place it on a sheet of baking paper.
- 23. Roll out the dough flat.
- 24. Spread the seasoned sour cream evenly over the dough.
- 25. Leave a border of about 1 centimeter free at the edge of the dough.
- 26. Distribute half of the prepared vegetables (asparagus and potatoes) on the dough.
- 27. Carefully transfer the flammkuchen from the baking paper onto a hot baking tray.
- 28. Place the flammkuchen in the lower third of the preheated oven.
- 29. Bake the flammkuchen for about 10 to 12 minutes.
- 30. Take the finished flammkuchen out of the oven.
- 31. Sprinkle the green spring onion rings over the hot flammkuchen.
- 32. Season the flammkuchen to taste with a little more salt and pepper.
- 33. Serve the flammkuchen directly while warm.
