  1. 1. Clean the mushrooms if necessary using a kitchen towel and slice them thinly.
  2. 2. Wash the spring onions thoroughly, dry them, and slice them into rings after removing the root ends.
  3. 3. Wash the thyme, pat it dry, pluck the leaves from the stems, and chop them coarsely.
  4. 4. In a bowl, mix together the goat fresh cheese, the crème fraîche, and the chopped thyme.
  5. 5. Season the cheese mixture with salt and pepper to taste.
  6. 6. Preheat the oven to 220 degrees Celsius using top and bottom heat.
  7. 7. Take out the pizza dough and roll it out thinly, keeping the tomato sauce aside for another use.
  8. 8. Divide the dough into two equal halves.
  9. 9. Continue to roll out each half on a surface lightly dusted with flour until it reaches the size of a baking sheet.
  10. 10. Place the two dough bases on two baking sheets lined with baking paper.
  11. 11. Spread the prepared goat cheese mixture evenly over each dough half.
  12. 12. Generously top the tarte flambée with the mushroom slices.
  13. 13. Sprinkle the spring onion rings and the bacon strips over the top.
  14. 14. Bake the tarte flambée one after the other in the preheated oven for about 12 minutes until crispy.
  15. 15. Sprinkle the finished tarte flambée with a little more pepper before serving.
