  1. 1. Let the salmon thaw overnight in the refrigerator.
  2. 2. Preheat the oven to 250 degrees Celsius with top and bottom heat.
  3. 3. Mix flour, water, salt, and 4 tablespoons of oil in a bowl to form a smooth dough.
  4. 4. Divide the dough into two equal portions and form balls.
  5. 5. Cover the dough balls with a cloth and let them rest for about 15 minutes.
  6. 6. Heat 1 tablespoon of oil in a pan over high heat.
  7. 7. Rinse the salmon and pat it dry with kitchen paper.
  8. 8. Fry the salmon in the hot oil for about 5 minutes.
  9. 9. Season the salmon with salt and pepper.
  10. 10. Break the salmon into coarse pieces using a fork.
  11. 11. Mix crème fraîche with horseradish, honey, and a pinch of salt in a bowl.
  12. 12. Wash the spring onions and dry them thoroughly.
  13. 13. Remove the roots of the spring onions and slice them into rings.
  14. 14. Wash the apple and cut it into quarters.
  15. 15. Remove the core from the apple quarters.
  16. 16. Slice the apple flesh into thin slices.
  17. 17. Clear a floured work surface.
  18. 18. Roll out the dough halves thinly.
  19. 19. Place the dough rounds on baking sheets lined with baking paper.
  20. 20. Spread the horseradish crème mixture evenly over both dough rounds.
  21. 21. Top the dough rounds with the salmon, apple slices, and spring onion rings.
  22. 22. Bake the flammkuchen one after the other in the oven for about 8 minutes.
  23. 23. Remove the flammkuchen from the oven when they are crispy and golden brown.
  24. 24. Cut the flammkuchen into pieces.
  25. 25. Sprinkle some pepper over them.
  26. 26. Serve the flammkuchen immediately.
