🍽️ Crispy Flammkuchen with Apple and Salmon

Ingredients
- Salmon, frozen 450 g
- Wheat flour, Type 405 600 g
- Water 400 ml
- Salt Pinch
- Oil 5 Tbsp
- Pepper, black ground Pinch
- Creme fraiche 200 g
- Horseradish 1 tsp
- Honey 1 tsp
- Spring onions 1 bunch
- Apples, red 1 pc.
Instructions
- 1. Let the salmon thaw overnight in the refrigerator.
- 2. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 3. Mix flour, water, salt, and 4 tablespoons of oil in a bowl to form a smooth dough.
- 4. Divide the dough into two equal portions and form balls.
- 5. Cover the dough balls with a cloth and let them rest for about 15 minutes.
- 6. Heat 1 tablespoon of oil in a pan over high heat.
- 7. Rinse the salmon and pat it dry with kitchen paper.
- 8. Fry the salmon in the hot oil for about 5 minutes.
- 9. Season the salmon with salt and pepper.
- 10. Break the salmon into coarse pieces using a fork.
- 11. Mix crème fraîche with horseradish, honey, and a pinch of salt in a bowl.
- 12. Wash the spring onions and dry them thoroughly.
- 13. Remove the roots of the spring onions and slice them into rings.
- 14. Wash the apple and cut it into quarters.
- 15. Remove the core from the apple quarters.
- 16. Slice the apple flesh into thin slices.
- 17. Clear a floured work surface.
- 18. Roll out the dough halves thinly.
- 19. Place the dough rounds on baking sheets lined with baking paper.
- 20. Spread the horseradish crème mixture evenly over both dough rounds.
- 21. Top the dough rounds with the salmon, apple slices, and spring onion rings.
- 22. Bake the flammkuchen one after the other in the oven for about 8 minutes.
- 23. Remove the flammkuchen from the oven when they are crispy and golden brown.
- 24. Cut the flammkuchen into pieces.
- 25. Sprinkle some pepper over them.
- 26. Serve the flammkuchen immediately.
