  1. 1. In a bowl, mix 200 g flour, baking powder, and 1/2 tsp salt. Stir in the beer gradually until a thick, smooth batter forms. Let the batter rest, covered, for 30 minutes.
  2. 2. Preheat the oven to 200 °C (convection). Peel the potatoes, cut them into fries, wash them thoroughly, and let them drain. Toss them with cornstarch on a baking sheet lined with parchment paper. Then mix with sunflower oil and bake for about 25 minutes until golden brown.
  3. 3. Separate the egg and beat the egg white stiff in a tall container with a hand mixer. Gently fold the egg whites into the beer batter. Rinse the fish and pat it dry. Season the remaining flour with salt and pepper on a plate, and coat the fish pieces well in it.
  4. 4. Heat the frying oil in a deep fryer or a large pot to about 180 °C. Dip the fish pieces into the batter in batches and fry in the hot oil for 6–8 minutes until crispy, depending on thickness. Let them drain on kitchen paper and keep warm.
  5. 5. Take the chips out of the oven, season with salt and pepper, and serve together with the fried fish. Enjoy your meal! Tip: Traditionally, pea puree is served with this.
