🍽️ Crispy Fish Fingers with Creamy Mashed Potatoes and Spinach in Cream Sauce

Ingredients
- spinach, frozen 500 g
- potatoes, floury 1 kg
- salt pinch
- onions, yellow 1 pc
- oil 4 tbsp
- heavy cream 200 ml
- pepper, black ground pinch
- nutmeg, ground 0.25 tsp
- fish sticks 500 g
- eggs 4 pc
- butter 4 tbsp
- milk 100 ml
Instructions
- 1. Take the frozen spinach out of the freezer to let it thaw.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Cut the potatoes into coarse cubes.
- 4. Place the potato cubes into a pot.
- 5. Cover the potatoes with salted water.
- 6. Bring the water to a boil in a pot.
- 7. Reduce the heat to medium.
- 8. Cover the pot with a lid.
- 9. Let the potatoes cook for about 25 minutes.
- 10. Halve the onion and peel it.
- 11. Dice the onion into fine pieces.
- 12. Heat 1 tablespoon of oil in a frying pan on high heat.
- 13. Fry the onion cubes for about 2 minutes.
- 14. Add the spinach leaves to the pan.
- 15. Deglaze the spinach with 200 milliliters of cream.
- 16. Let the spinach simmer on low heat.
- 17. Season the cream spinach with salt, pepper, and nutmeg.
- 18. Keep the cream spinach warm until you serve the dish.
- 19. Heat 2 tablespoons of oil in a clean frying pan on high heat.
- 20. Fry the fish fingers for about 5 minutes until golden brown.
- 21. Let the fish fingers drain on kitchen paper.
- 22. Heat another 1 tablespoon of oil in the pan on high heat.
- 23. Crack the eggs one by one into the hot pan.
- 24. Fry the eggs for about 4 minutes to make sunny-side-up eggs.
- 25. Season the sunny-side-up eggs with salt and pepper.
- 26. Drain the cooking water from the potatoes using the lid.
- 27. Add 4 tablespoons of butter and 100 milliliters of milk to the potatoes.
- 28. Mash the potatoes into puree using a potato masher.
- 29. Season the mashed potatoes with salt, pepper, and nutmeg.
- 30. Serve the mashed potatoes with the cream spinach, fish fingers, and sunny-side-up eggs.
